Fukano Distillery
About the distillery
Fukano Distillery is located in Hitoyoshi in Kumamoto, surrounded by mountains and known for its pure water. It is a family-run whisky distillery where rice, koji-inspired craftsmanship, and long cask aging come together in small, highly limited releases. The whisky is distilled, matured, and bottled in Japan, but it is aimed at export markets and has its own distinct position in the Japanese whisky world.
History
Five generations in the Fukano family
Shigeruriku Fukano is the fifth generation running the distillery. It links the site to a long family tradition that still shapes production today.
Kumamoto as a pioneer region for cask-aged shochu
Fukano was the first distillery in the Kumamoto region to mature its shochu in casks. The initiative was started by Chizuru Fukano, the mother of the current distillery president Seiichi Fukano, and the subsequent wood aging is what transforms the fresh shochu into whisky.
Raw materials and production
Fukano works with a combination of malted and unmalted rice. The raw material is locally grown, and the distillery is known for the water from the Hitoyoshi area, described as pure and surrounded by nature. Production is unusual in the whisky world because rice is a clean, sulfur-free distillate that does not require copper stills as a starting point to become drinkable; instead, distillation is described as being carried out in stainless steel at a relatively low strength, while the whisky itself is also described as distilled in pot stills. After distillation, the spirit is transferred to casks and takes on its character through aging. The overall approach is small-scale and characterized by only a few casks at a time, which fits the very limited releases.
Maturation and cask types
Maturation is one of Fukano’s most distinctive features. The distillery ages its spirit in new, charred American oak casks, and that treatment of the wood is a central part of its identity. At the same time, several releases work with sherry casks, red wine casks, and used oak casks, so the cask’s previous contents become an important part of the expression. A warehouse is also mentioned that is more reminiscent of a Scottish dunnage warehouse than a Kentucky rickhouse, pointing to a relatively classic and calm maturation. Several releases show that Fukano uses casks actively and in varied ways, but always with a focus on small, limited batch releases.
Whiskies
The range runs from the current Fukano Select to a series of limited and earlier releases such as Fukano Blonde, Fukano 200th Anniversary Sherry Single Cask, Fukano Edition #2223, Fukano Chizuru, and several Vault Reserve releases. Common to them all is that they are small in volume and based on rice whisky with clear cask influence. The current Select marks an annual release, while the other bottlings highlight the distillery’s more experimental and anniversary-oriented side. Taken together, the series paints a picture of a distillery moving between elegance, sherry character, red-wine influence, and more fruity, nutty expressions.

Whisky styles and tasting profile
Fukano moves within a field of elegant fruit, nuts, tea, and soft sweetness. Asian pear, lychee, strawberry, and candied apples provide a bright, juicy fruit line, while plums, red raisins, apple pie, and roasted and caramelized apples point toward riper fruit and baked sweetness. In addition, a clear signature of honey, butterscotch, toffee, and raw honey rounds out several of the releases. On the more complex side, there is also umami, Manzanilla Sherry, walnut, roasted cashews, and cacao, giving the whisky a drier, more savory layer.
Visiting the distillery
There is mention of a tour of Fukano Distillery in Japan, so the place is a destination and not just a production address. The visit is linked to the distillery’s history, production, and surroundings in Hitoyoshi, and it is highlighted as an experience in an area with mountains, pure water, and nature. The available text does not provide fixed opening hours or booking details, but it clearly shows that there is a guided tour for visitors.
Philosophy and craftsmanship
Fukano is built on family tradition, local ingredients, and a method where shochu and whisky are connected through cask aging. The distillery emphasizes the work with rice, the pure water from Hitoyoshi, and a production process where only a few casks are bottled each year. It creates a clear philosophy of small-batch releases and a craftsmanship rooted in the place and the family.
