Historie
Geographe Distillery is located at Old Coast Rd Brewery in Western Australia’s beautiful southwest region. Since its establishment in 2008 they have quietly perfected the craft behind premium spirits and liqueurs. A philosophical approach to distillation and a love of beer and wine lead to experiments in quiet rooms and in small casks, where the aim is to highlight the good qualities and remove the less good ones.
Produktion/Fremstilling
Distilling is described as a slow, philosophical, and quiet occupation – focusing on the original product and highlighting the right notes while the wrong ones are removed. The final whisky comes after several years of resting in 'good' casks. Geographe focuses on bringing the good elements into focus and reduces the amount to increase strength and character.

BELLWETHER WHISKY – 10th Anniversary Release (350ml): A single cask whisky matured in two casks starting in 2014, matured in small French Port casks and finished in bourbon casks. Light golden color, aromas of dried fruit and caramel as well as peat smoke. A blended malt (Bairds medium peated). Non-chill-filtered and bottled at 46.8% alc. Cask: 64L French oak casks, first fill ex-tawny, heavy char. Distilled June 2014, bottled Nov 2018. 219 bottles of 350ml each.

BELLWETHER WHISKY – ’10th Anniversary’ Cask Strength (350ml): Uncut, 70.4% alc. A single cask whisky, full of spice and warmth without water. Aged in a French oak cask (Port) with notes of dark fruits, chocolate, oak and smoke. Distilled July 2013, bottled Dec 2018. Malt: Bairds with heavily peated. 64L cask, 70.4% alc.

BEACON GIN (350ml): Traditional London Dry gin, juniper-driven with citrus notes such as Harvey-tangerine. Botanicals listed: juniper, coriander, lemon, lime, tangerine, licorice root, rosemary, star anise, cassia.

LIMONCELLO (350ml): Hand-peeled Harveys lemons, maceration in ethanol for six weeks, then simple syrup and water to 27% alc. Ready for fridge or freezer, served cold over ice or mixed with cold water.

- There are also several 'cask direct' spirits, currently available only by the glass at Old Coast Brewery in Myalup.

Filosofi
Distillation is described as something that gives time to think – a balance between power and finesse. What cannot be preserved is removed, and with solid cask aging the whisky expresses itself over the years.
