History

Sullivans Cove Distillery is located in Hobart, Tasmania. As a distillery, they produce genuinely rare whisky and follow a philosophy of never rushing the process: it is a whisky that is never hurried or replicated. At the distillery, a thousand small decisions are used to bring each cask to its natural peak.

Production / Manufacturing

Where centuries of practice meet a distinctly Tasmanian philosophy. American Oak is ideal for long-term maturation; less porosity gives slow development and layers of vanilla, coconut, and fruity complexity. American Oak casks include ex-Bourbon (previously used for bourbon), Second-Fill, and Ex-Tawny. French Oak is legendary and is also used in Second-Fill. Double Cask blends French and American oak as a single malt expression, with notes of tropical and stone fruits, caramel, vanilla, and spices. Old & Rare portfolio showcases Australia’s oldest whiskies. The production is described as uniting centuries of practice with the Tasmanian approach.

Products / Whisky Series

  • American Oak Ex-Bourbon (single cask), American Oak Second-Fill, American Oak Ex-Tawny; notes of vanilla, coconut and fruit.

  • French Oak Second-Fill (and other French oak expressions).

  • Double Cask (Single Malt): a perfect union of French and American oak, blended in bond stores and micro-batched for complexity.

  • Old & Rare: Australian older whiskies.

  • XO Single Cask Chardonnay Brandy: produced from Tasmanian Huon Valley Chardonnay and matured in a first-fill French oak ex-Tawny cask for 13 years and 7 months; alcohol 47.6% vol.
