History
REST Destilleri was founded by three students from Aarhus Business Academy who saw potential in incorporating alcohol production into a circular process. In the old barn buildings at Elmegaarden north of Aarhus, they built their own production facilities and began looking for by-products that they could turn into spirits. Today REST Destilleri consists of six people who daily experiment with new methods and develop spirit products of the highest quality. They follow farm-to-glass and distill high-quality spirits from by-products. REST is based at Elmegaarden near Aarhus and works with sustainable production methods with the environment in focus. The production process is described as by-product alcohol arriving at the farm and being worked on toward the final product sent to the customer. They love to experiment and work daily to perfect the process. They also mention collaboration with companies, including Smukfest, which is already a partner.
