Norlyk Distillery is a micro-distillery in the middle of Tønder, founded by Jesper Norlyk and Claus Norlyk in 2020. Here, gin, rum, and other spirit products are produced without artificial flavor nuances, and the venue is located in a building that previously housed Gustav Rothes’ printing office. Visitors experience both history, a courtyard, and tasting samples at the same address.

History

Norlyk Distillery ApS was founded by Jesper Norlyk and Claus Norlyk in 2020 and established itself as a micro-distillery in Tønder. The building they work in has a longer local history: the building was previously Gustav Rothes’ printing office, which stopped production in 1980. At the same time, the distillery draws on the site’s local identity, among other things through the swan in the logo, inspired by the old inn “Zum weissen Schwan,” which was located in the square about 100 years ago. Today, the old courtyard with cobblestones and a tree of bittersweet cladding forms part of the experience, and the fine details and skylights in the former building are used for guided tours, art exhibitions, and tastings. It is a young distillery with roots in Tønder’s city history and in a specific building that has changed function from a printing office to spirit production.

Ingredients and production

Distillation takes place using the London Dry Gin method for gin production, and products are made from scratch.

Whiskies

The range on the webshop spans from classic gin to more fruity and especially named varieties, as well as several rum products. Among the permanent names are Classic Gin, Apple Gin, Rhubarb Gin, Blueberry Gin, Elderflower Gin, and Rum, and in addition there are variants such as GunPowder Rum, Bog Oak Rum, Felix Gin, Festival Gin, and Sønderjysk Ishockey Gin. This creates a range where classic gin is the starting point, while fruit and special themes create variety. The whole points to a small house with a clear, recognizable style and several different expressions within the same framework.

The style and flavor profile of the whiskies

Norlyk’s expressions come together around a clean and gentle base flavor that should be consistent from batch to batch. The fruit side is clear with apple, rhubarb, and blueberry, while elderflower gives a floral direction. At the same time, GunPowder Rum and Bog Oak Rum point toward a more spiced and wood-influenced character. In this way, the house spans from fresh, bright, and fruity notes to darker and more distinctive expressions.

Visit the distillery

The distillery can be visited in Tønder, and guided tours are offered by appointment. It is open Monday to Friday from 10:00–17:00 and Saturday from 10:00–15:00, while Sunday is closed. The visit can be combined with tastings, and the historical setting includes both guided tours and rotating art exhibitions. Changes in opening hours and special events are announced on Facebook.
