Historie
Chiyomusubi酒造 was founded in 1865 in 境港市 (慶応元年). The company builds on a long tradition of fermentation and quality, and over the centuries has developed both sake and later whisky as part of its product range. In 2025 the company marks its 160th anniversary and also achieved a renewed management structure, as representative 岡空 聡 became the new CEO/Managing Director, with 新体制 announced in 2025. The company describes itself as an ancient house that combines tradition and innovation, and that aims to be an ambassador for Japanese sake and whisky in the world.
Produktion / Fremstilling
Chiyomusubi follows a definition of Japanese Whisky where the requirements are: raw materials must be malted, and processing (mashing, fermentation and distillation) takes place in Japan, and at least three years of aging in wooden casks before any products are marketed. They insist on using selected malt grains, Japanese yeast strains and controlled low-temperature fermentation as well as long aging to achieve a deep, rounded flavor in their whiskies. The whisky program began in spring 2021, and the company describes an approach focused on tradition and precision throughout the entire process.
