丹丘蒸留所
About the distillery
丹丘蒸留所 is located in the East Kawachi area of Hokkaido, in Tōgawa-chō. It is a craft setup for both single malt whisky and craft gin, and the starting point is the clear water from the Yama-ski area: meltwater that has passed through many years of geological time and ends up as mineral-rich, purified “fukujūsui” (hidden spring water). The goal is to capture the landscape’s calm in a spirit, and they work with local ingredients such as rice as well as roots in the local nature. The building is also special because it is anchored in a public–private partnership.
History
公設民営型の蒸留所として誕生
In Tōgawa-chō, as breweries and wineries continued to open, attention was drawn to the town’s specialties and water. After consulting the town about establishing a distillation facility within the town, a “publicly established, privately operated” distillery was born through a collaboration between the municipality and the private sector.
Raw materials and production
Mechanically, the process starts with the water. The meltwater from the Daisetsuzan area is purified and mineralized over time in the soil layers and is then used in “仕込み” (preparation of the raw material). Together with local ingredients such as rice, it enters a fermentation process lasting a total of 168 hours. When the mash is ready, it is distilled on “最新鋭の蒸留器” (state-of-the-art distillation equipment). The finished spirit is filled into wooden casks, and then a calm maturation follows through Hokkaido’s seasons, where temperature differences are part of the process.
Maturation and cask types
The maturation described takes place in wooden casks, where the new spirit is filled and matures slowly through Hokkaido’s changing seasons. At the same time, climatic conditions are linked to the maturation speed via “年較差” (annual temperature differential), which is cited as a reason for faster maturation. In this way both the cask and the seasonal rhythm become a central part of how the whisky develops in the barrel.
Whiskies
丹丘蒸留所 produces single malt whisky and craft gin. The provided material outlines the framework for whisky production (including 168 hours of fermentation, distillation on modern equipment, and maturation in wooden casks) and notes that there is a private cask program, where one can become a private cask owner and receive a “北海道ウイスキー” from one’s own cask maturation. Product names and specific whisky releases are not included in the excerpt provided here, but the direction is clear: a spirit that ties the clarity of Daisetsuzan water and Hokkaido’s seasons to a distinctive result.
Visit the distillery
The public can visit the distillery. A 蒸留所見学 (distillery tour) is offered, where you can look behind the production, which is normally not accessible. After the visit, you can take your time in the tasting room and sample. The price for the distillery visit is listed as “¥2,000〜”.
Philosophy and craft
There is a clear ambition to portray the quiet beauty of Hokkaido and Tōgawa-chō in a spirit. They emphasize the use of Daisetsuzan water, local ingredients such as rice, and materials rooted in the region’s nature, and that skilled distillers from the gin and whisky worlds are gathered in Tōgawa. The working method emphasizes careful production, free ideas, and safe distillation techniques, and they seek to create something truly unique by combining new technologies with knowledge that has been passed down.
