Phoenix Distillery

  • A distillery reviving Belgian rum and whisky traditions under the name Phoenix Distillery. The original business began as Dr. Clyde Distillery in 2015 and was described as focused on 100% Belgian production and traditional craftsmanship methods.

History

  • 2015: Started in a small garage workshop in Seraing under the name Dr. Clyde Distillery; production of 100% Belgian alcohol from cassonade.

  • 2016: Became the country's first rum distillery; all production processes (fermentation, distillation, aging, and bottling) take place at the distillery.

  • 2018: Moved to Trois-Ponts and began expanding the range to rum and started distilling whisky.

  • 2021: July floods destroyed stored casks (at least 6 casks were washed away).

  • 2022: A major fire destroyed the distillery and much of the stored stock; the site had to be abandoned and rebuilt.

  • April 2024: Re-emerged as Phoenix Distillery with new premises and new alembics; celebrated the rebirth with the opening in April 2024 (Phoenix Rising-produced whiskies and rums).

  • 2024: Release of the Cask Strength Whisky “Phoenix Rising” to mark the opening of the new distillery.

  • 2020-2023: Whisky produced as a single malt, aged for at least three years in selected casks; each year the whisky is blended with different casks to give a unique identity for that vintage.

Production

  • Rum:

  • First Belgian rum distillery; distilled in a pot still from molasses, fermented by cultured yeasts at the distillery.

  • White Rum: distilled without aging; brut d’alambic (unaged in barrels).

  • Classic Rum: aged in casks for at least 2 years, then reduced to 45% ABV.

  • Cask Strength Rum: aged at least 2 years; single cask and brut de fût, unreduced to cask strength.

  • Spiced, Honey, Raspberry, Rum Cream: various flavored variants and infusions (vanilla, honey, fruits) in pot-still rum.

  • Whisky:

  • Single Malt Whisky produced by double distillation in pot stills.

  • After distillation, the whisky is aged in selected casks for at least 3 years; annually the whisky is blended with different casks so that each vintage has its own identity.

  • To date releases include a Cask Strength Whisky ('Phoenix Rising' edition) as a collector’s edition.

  • General branded processes:
