Historie

  • The cornerstone of Brennerei Zürcher was laid in 1978 by Werner Zürcher with the purchase of mobile distilling equipment, which formed the basis for a specialty distillery in Dinhard.

  • Since 1987, Christian Zürcher has been distilling from his own and acquired Swiss fruits, producing a range of classic and innovative fruit distillates.

  • The company combines a contract distillery business (distillation on behalf of customers) with its own production and sales, and has operated Zürcher's Schnapslädeli since 1998.

Produktion

  • As a contract distiller, distillates are produced on behalf of third parties according to the customer's wishes; each mash is distilled separately, and the customer receives their own distillate.

  • Minimum quantity: 25 kg (except for spirits and specialties). If the quantity is not reached, the fruits may be distilled by Brennerei Zürcher, and the customer then receives their share in the brand.

  • From fruit to distillate: Fermentation is required before distillation; the fruits should be ripe and clean; specific fruit preparations and mashing procedures are described in detail, including handling the condition of the fruit mass and appropriate fermentation conditions.

  • Fermentation details: plastic fermenters are recommended; tightly fitting lids, but not completely full; 10–20% headspace in the vessel; about 20 g of dry yeast per 100 kg of fruit; fermentation temperature 15–18°C; 3–4 weeks of fermentation.

  • Customer support available? Assistance with mashing and loan of suitable vessels offered; yeast available on request via contact.

  • Finance/costs: 30% discount on alcohol tax for small producers if annual production is less than 30 liters of pure alcohol; standard duty without discount is 29 CHF per liter of pure alcohol; 40% alcohol content costs 11.60 CHF per liter without discount and 8.12 CHF with discount.

  • Per batch: contract distillation (distilling service) up to 4 liters 78 CHF excluding VAT; above 4 liters, pricing varies per liter, with additional costs for waste, energy, bottles, bottling and refining.
