Timboon Railway Shed Distillery
About the distillery
Timboon Railway Shed Distillery is located in Timboon in South-West Victoria and has been producing small batch single malt whisky on-site since 2007. The distillery is housed in a historic railway shed and combines classic Scottish inspiration with a distinctly local, family-owned operation. It’s especially interesting for whisky lovers because the house distills, matures, and heavily chars its casks itself, and works with large ex-fortified wine barrels in American or French oak.
History
The whisky story in Timboon begins long before the distillery’s own license and the opening of the current doors. In its day, the area had hidden bush stills that supplied illegal spirits to the district, and that legacy is still part of the site’s narrative. The distillery itself has produced genuine small batch single malt whisky on-site since 2007. Today it’s run as a family business, where production, maturation, bottling, and meeting guests are closely tied to the same small team and to the place surrounding the historic shed.
Raw materials and production
Timboon Railway Shed Distillery makes single malt whisky in copper pot stills, and the results are described as a sweet and balanced new make. Production is based on small batches and a distinctly craft-driven approach, where the distillery itself prepares and heavily chars its casks in ABeckett's Creek Cooperage next to the bond stores. Maturation takes place mainly in large ex-fortified wine barrels, especially port or sherry, and both American and French oak ex. are used. It’s a setup that gives the house control over both casks and storage and binds the distillate closely to the place where it’s made.
Maturation and cask types
Maturation is centered on large ex-fortified wine barrels, especially casks that previously held port or sherry. The distillery works with both American and French oak, and the casks are prepared and heavily charred internally in its own cooperage. The whisky is stored in the bond stores in Timboon, which links maturation directly to the distillery’s own environment and craftsmanship. The combination of fortified wine, wood type, and heavy charring is an important part of the house style.
Whiskies
The core range consists of four named single malts: Port Expression, Christie's Cut, Tom's Surrender, and SMOKY 1881. They are sold in both 500 ml and 200 ml bottles, and in addition, a Limited Edition appears under the name Big Moss. The range shows a house working within the same single malt framework, but with different expressions, where both a port character and a smoky variant are part of the palette.

Whisky style and flavor profile
The style brings together several clear directions: a sweet and balanced malt profile, distinct fruity notes with a port and sherry influence, and a smoky expression in SMOKY 1881. In addition, the use of American and French oak points to a pronounced wood character in the house’s whiskies. The whole is classic single malt, with fruit, sweetness, and smoke as the driving elements.
