Demoiselle Distillery

About the distillery

Demoiselle Distillery is an Australian small-batch distillery, founded in 2012, that makes its entire spirit production in-house. The house combines whisky with absinthe, gin, rum, vodka, and agave spirit, and much of the work is based on botanicals, fruit, and agave from their own farm. This results in a style where craftsmanship and local ingredients really stand front and center.

History

Demoiselle Distillery was established in 2012 and thus belongs among the early players in Australia’s craft distilling wave. From the very beginning, the distillery has insisted on producing every drop of the alcohol it sells itself, without buying finished spirit in. The first products were absinthe, and since then the range has grown significantly, including gin, whisky, rum, limoncello, arancello, vodka, and agave spirit. The agave project has been developed over more than a decade, with the plants grown on the farm from seed and bulbil, and where the distillery describes that the first results of the work are now starting to show. The story is therefore both about a long-term commitment to in-house production and about a distillery that has continuously expanded its horizons without losing its connection to the farm.

Ingredients and production

The production is based on small batches and on ingredients that the distillery grows itself or sources locally. On the farm, botanicals and fruit are used, and agave is also grown there before being processed further. The documented whisky is a single malt made on barley, while the distillery’s vodka is grain-based, and several of the house’s spirits are created using pot distillation. Agave spirit shows another side of the work: here, the agave is pit roasted for several days with ironbark wood, then hand-crushed and double distilled. Absinthe production is especially clear, because it is made with whole herbs and in a traditional style using pot distillation and subsequent coloring. Taken together, it paints a picture of a distillery that works very directly with its ingredients and is happy to let the process be visible in the finished product.

Maturation and cask types

The documented whisky is matured in a single American oak barrique of about 220 liters, and it is bottled from an Australian-made cask. This gives the whisky a classic oak-driven framework without the distillery, in the delivered text, going into details about maturation conditions or special finishing casks. For whisky lovers, the main thing to note is that the product is described as 7 years old, bottled at cask strength, and without chill filtration, pointing to a relatively direct and unspoiled cask expression.

Whiskies

The whisky selection, as shown in the delivered product pages, is centered around a single small-batch single malt whisky. It therefore contrasts with an otherwise broad spirits range that also includes absinthe in several versions, vodka, gin, agave spirit, and liqueur. The whisky is built on barley and American oak and comes across as a more classic, cask-focused track in a distillery that is otherwise best known for botanical and flavor-intense specialties. For the curious whisky drinker, it is a small but clearly defined part of the house.

The style and flavor profile of the whiskies

Demoiselle works within a flavor register where spiced anise, fennel, and wormwood recur in the absinthes, while citrus and lemon myrtle lift the fresh side. On the smoky end, you get flavors of cherry wood smoke and fruit-tree smoke, which adds depth and a darker, more aromatic profile. The whisky adds a more classic direction with American oak and a dry, cask-driven character, and in the absinthe side of the house, toasted nutmeg, vanilla, and warm dried pepper also appear as clear markers.

Visiting the distillery

The delivered text does not describe an actual visit program, but it contains a webshop, a contact section, and an invitation to find the distillery and follow it on Instagram. There are no specific details about tours, tastings, booking, or opening hours, so the focus of a visit can only be described as contact and online trade based on the material available.

Philosophy and craftsmanship

The distillery’s philosophy is clearly stated: they make everything in-house that they sell, they work in small batches, and they build the flavor on botanicals and fruit from their own farm or from nearby farmers. At the same time, they grow their own agave and use traditional methods, especially in the production of absinthe, where whole herbs and classic pot distillation play a central role.
