Company history
-
Distillerie d’Isle de France was founded by three friends on a farm in Seine-et-Marne.
-
The distillery was officially established in 2019, with the aim of creating spirits with a unique identity in a short supply chain and with local influence.
-
According to the presentation, the distillery is described as an artisanal, creative approach and a “histoire d’amitié” between the founders, which also marked the beginning of a lifelong passion for spirits and local ingredients.
-
The house highlights on-site production at the farm and ongoing development over the years with a continued focus on craftsmanship, quality, and local development.
Production details
-
Notre Alambic Stupfler®: The distillery uses a single-column still from Stupfler®, which they describe as the world’s only of its kind. The still is energy-efficient and designed to produce distilled spirits without some of the traditional defects.
-
Production philosophy: Production largely operates in a circulating short supply chain (circuit court) and focuses on controlling the raw materials close to the source. Olivier runs the farm and produces a large portion of the raw materials (barley, wheat, seagrass, sugar beets) on-site to ensure quality and self-sufficiency.
-
Agroecology: Emphasis on conservation agriculture and agroforestry. Eleven hectares planted with agroforestry (trees and crops on the same parcel), as well as establishing an orchard and botanical garden to cultivate ingredients for the products.
-
Raw materials and adjustments: For rum they use molasses and sugarcane from various sources (including Cuba and Laos) and maturation procedures are followed on site; cane sugar and spices are chosen carefully and largely on the farm. For gin and other spirits, fermentation of fruits and plant-based maceration are central methods.
-
Special techniques: Use of the unique STUPFLER® techniques and single-pass distillation to preserve the true aromas and character of the ingredients.
Whisky products
-
Prémices – New Make Maple-Rye (Edition limitée): New Make, which is the first “young whisky” stage that cannot yet be called whisky. Maple-Rye consists of malted rye (51%) and barley (49%), which gives characterful and spicy notes. After fermentation the distillate is aged for 6 months in a barrel that previously held maple syrup and stout. This constitutes the presentation’s first whisky-related project and points to future whisky productions.
-
Mapple-Rye (New Make Maple-Rye) – Edition limitée: A limited edition of Mapple-Rye, representing premises for future whiskies and underscoring the continental concept (maple and rye/barley composition). Notes are suggested to be characterful and spicy, with clear maple sweetness and warmth from the rye.
-
Note: The distillery states that this is “premices” (the first steps in whisky production) and describes six months of maturation for later whisky production.
Tasting notes for the whiskies
- Mapple-Rye (New Make Maple-Rye): Sweetness from maple combined with warmth and spicy notes from rye and barley; notes of maple syrup and stout cask aging, giving a continent-inspired profile and potential for further development into whisky.
