History
Bimber Distillery was founded by whisky enthusiasts with a mission to produce high-quality single malt whisky with character using traditional methods rarely seen today. The journey begins on a single farm where 100% of the barley is grown locally and malted on-site by floor malting, hand-mashed and slowly fermented in wooden washbacks. It all happens with direct flame to heat the small copper pot stills, and the spirit is aged in hand-selected casks. Finally the whisky is bottled on-site at the distillery.
Bimber laid down its first casks in 2016, and the first single malt, The First, was released in September 2019. The limited edition of 1,000 hand-numbered bottles sold out in three hours. As the story unfolds, Bimber continues to develop new single malt whiskies with a fruit-forward profile and craftsmanship at the forefront.
There are also special Christmas releases such as Santa's Edition 2025, a festive single malt matured in Pedro Ximénez sherry casks, and the spirit of exploration in the Underground Collection, which in collaboration with Transport for London celebrates London's underground with unique releases exclusively via a dedicated website.
Bimber also offers first age statement releases such as Harmony of Eight and Bimber 8 Year Old Single Cask Edition, marking milestones in the achievement and tradition of craftsmanship in London.
Production and products also include the Apogee series, which combines selected malts for blends and subsequently matures in ex-Bimber casks to add new nuances. Apogee Pure Malt Whisky is described as a meeting of expertise and imagination, where blending and ex-Bimber cask contribute to complexity.
Production
Bimber Distillery controls the whole process from grain to glass. Barley is locally grown on a single farm in Hampshire and is a two-row spring barley, chosen for its high extract and fermentability. The malting process takes place by floor malting, and the fermentation occurs slowly over seven days in wooden washbacks. Direct flame heats the small copper pot stills, and the spirit ages in hand-selected casks. Whisky is bottled on-site at the distillery.
