Laws Whiskey House

Brief overview of the distillery

Laws Whiskey House is a distillery in Denver, Colorado, founded in 2011 by Al Laws. The company cultivates relationships with local family farms and produces whiskey exclusively from Colorado grain; all cultivation, distillation, aging, and bottling take place on-site. With an explicit 'No Shortcuts' philosophy, Laws emphasizes the use of heirloom and heritage grains and long aging as central elements of their work.

History

Al Laws opened Laws Whiskey House in Denver in 2011 with an ambition to let whiskey reflect the people and the land that grow the grain. From the beginning, the distillery worked closely with two family-owned farms: the Cody family in the San Luis Valley, which grows wheat, rye and barley, and the Ohnmacht family on the eastern plains, which supplies corn. The distillery waited three years before selling its first bottle to ensure quality. Since then, Laws has grown around the principle of patience and craftsmanship, launched Bottled in Bond releases, and built an internal workplace culture called 'The Village'.

Raw materials and production

Production is based on local heirloom and heritage grains: high-quality corn as well as heirloom wheat, barley, and rye from two family-owned farms in Colorado. Fermentation takes place as open-air fermentation, and distillation is performed on pot stills. Everything is distilled and bottled on-site in Denver. Several elements in the process are weighed heavily: careful grain selection, slow and craft-oriented treatment of mash, fermentation and distillation, and close collaboration between farmers, distillers, and the aging team.

Maturation and barrel types

Laws warehouses all their whiskey on-site in Colorado, where high altitude, thin air, and large temperature differences between day and night affect maturation. Standard aging is at least four years, while Bottled in Bond releases require a minimum of seven years of aging. There are no detailed details about specific barrel types or previous contents in the barrels used in the provided material.

Whiskeys

The portfolio includes core expressions such as Flagship Four Grain Bourbon and Flagship San Luis Valley Rye, as well as releases like Founder’s Select Colorado Straight Bourbon, Ralphie’s Reserve, and Bottled in Bond whiskeys. The range is built around the use of local grains and longer aging times, with certain releases carrying older age statements and bonded-status.

Philosophy and craftsmanship
