Founded in 1998. Edgefield Distillery is one of McMenamins' two distilleries (the other is at Cornelius Pass Roadhouse in Hillsboro).
Before distillation began, Edgefield had already been producing wine since 1990. In 1998 it seemed natural to start distilling cognac/brandy and grappa; whiskey soon joined the process.
Hogshead was the first aging/storage; later gin, rum and other spirits were added.
Head Distiller James Whelan and his team led the development of the distillery and its products.

Production methods: Distillation of brandy and grappa initially, later whiskey as well as gin, rum and other spirits. In addition, development of bitters and the use of botanicals and natural flavorings in McMenamins' spirits.
Distillery Bar at Edgefield hosts tastings of spirits and serves as the 'clubhouse' for Edgefield's Pub Course.
Edgefield Makers Tours are held every Friday at 3:30 PM (21+).
Tasting experiences and products are produced under the leadership of dedicated distilling staff, including Head Distiller James Whelan.
