Andalusia Whiskey Co.
Brief Overview of the Distillery
Andalusia Whiskey Co. is a craft distillery in Blanco in the Texas Hill Country, making grain-to-glass single malt whiskeys. The process begins with a mash of American-grown, malted grains, and the entire production — including distillation — takes place locally in a hand-built copper pot still. The distillery's name draws on the landscape's resemblance to the southern Spanish Andalusia.
History
Founding
Tommy Erwin and Ty Phelps met at Real Ale Brewing Company, where Tommy worked as a microbiologist in the laboratory and Ty as lead brewer. After several years of collaboration, they decided to start a distillery and bring their experience from brewing, chemistry, biology, gastronomy, and restaurant operation into whiskey production.
Origin of the Name
The name Andalusia arose when the founders found old papers showing that the parcel of land on which the distillery was built had previously been known as Andalusia Ranches. The rolling hills of the Texas Hill Country reminded them of the Andalusian landscape, and the name was chosen as a reference to the area.
Raw Materials and Production
The production approach is grain-to-glass: the distillery starts with a mash of American-grown, malted grains and carries out the rest of the process on-site in Blanco. The distillation takes place in a hand-built copper pot still, which is central to the distillery's production setup. The founders' backgrounds in brewing and laboratory environments contribute knowledge of fermentation, enzymatics, and control of process parameters, which is integrated into the workflows. The focus is on the origin of the raw materials and the craft in each phase from malting and mashing to distillation.

The range centers on grain-to-glass single malt Texas whiskeys, distilled and sold from the tasting room and via the web store.
