White Dog Distilling

About the Distillery

White Dog Distilling is a small, active micro-distillery and tasting room in Pawtucket, Rhode Island. The place combines small-batch whiskeys, flavored moonshines, gin, rum, and liqueurs with a speakeasy-inspired on-site space where guests can participate in tastings, cocktail classes, and tours from grain to glass.

History

Founders Carlo and Alecia Catucci established White Dog Distilling in 2016. The couple brought each their backgrounds — Carlo with a technical approach and years of interest in home distilling, Alecia with culinary and retail experience — and transformed a historic mill building in Pawtucket into a micro-distillery and tasting room. They invited friends and collaborators to participate, and the team is referred to internally as "The Pack". Since opening, White Dog has developed a broad portfolio of both unaged and barrel-aged spirits, as well as experiential offerings such as guided tours, cocktail classes, and private events.

Raw Materials and Production

The distillery's whiskeys are often built on a mash bill of 85% corn and 15% malted barley, and operate on small-batch principles from mash to finished product. Head Distiller Carlo Catucci has developed the house recipes and oversees production quantities and processes; Alecia contributes flavor development and blending. The production's distinctive features include barrel-resting the spirit in small "puppy" barrels, proofing the flavored whiskeys with cold-brewed coffee, and experiments with aging gin in used bourbon barrels. The distillery emphasizes craftsmanship, precision, and a grain-to-glass approach, but details about equipment, fermentation times, and water sources are not disclosed.

Maturation and Barrel Types

White Dog works with both small, faster-aging barrels and longer experiments. The original Puppy Bourbons are aged in small 5-gallon barrels (often referred to as "puppies") and have yielded bourbons aged around five months. There are also examples of 12-month aging and plans for longer 2- and 5-year releases. The distillery also uses used Puppy Bourbon barrels to impart character to gin and flavored whiskeys.

Whiskeys

The portfolio ranges from core bourbons (Puppy Bourbon) and collaboration releases like Sabin's Spirit to a range of flavored whiskeys in the Cornucopia line. In addition to whiskey, White Dog produces small-batch rum, floral citrus-oriented gin (Blackstone), several varieties of warm-spiced and seasonal moonshines, as well as Lella's Limoncello and other liqueurs. Many releases are small-batch or seasonal, and the distillery supplements production with tasting-room experiences.

The Whiskeys' Style and Flavor Profile

Several of the distillery's whiskey releases mention sweet bourbon notes such as caramel and vanilla, along with honey notes. At the same time, a certain smoky character is highlighted in some releases, particularly in the finish of Sabin's Spirit and in Puppy Bourbon. These directions appear in the descriptions and provide an overall picture of sweet, grain-forward bourbon expressions with hints of smoke.
