Toledo Spirits Co.
Short about the distillery
Toledo Spirits Co. is a craft distillery in Toledo, Ohio, combining production of handcrafted spirits with Bellwether, a cocktail bar and experiential space in the same historic warehouse by the Maumee River. The company makes everything from bourbons and an American single malt to experimental whiskies, moonshine and a range of spirits specially conceived for cocktails. The products reflect local sourcing, small batches, and an experimental approach to barrel aging.
History
Since its founding in 2013, Toledo Spirits Co. has evolved from a local craft distillery to a meeting place for cocktails and craftsmanship in Toledo. The distillery is located in a historic warehouse by the Maumee River in the Vistula neighborhood and has built Bellwether as a bar and experiential venue. The first spirit in practice was the experimental Whiskey Tango Foxtrot, where microbrewed beer was distilled, and this approach has led to ongoing small-batch releases as well as collaborations with local breweries. Over time the range has expanded with Lowertown bourbons, Vistula American Single Malt and other lines, while the company engages in local initiatives such as the Ohio Distillery Trail and supports charities and community projects.
Raw materials and production
Toledo Spirits operates as a craft distillery with a focus on small batches and source transparency. The raw materials include grains, fruits, and botanicals, with an emphasis on collaboration with local farmers. A notable production method is the making of Whiskey Tango Foxtrot: the starting point is a microbrewed beer, which is distilled and then aged in barrels chosen to support the beer's character. For their American single malt and bourbons, traditional techniques are used in combination with experimental barrel finishes, but details such as the number of pot stills, exact fermentation times, and other technical parameters are not specified.
Maturation and barrel types
Maturation practices at Toledo Spirits include traditional bourbon- and rye-finish casks as well as experimental finishes in wine casks. Vistula American Single Malt rests for over four years in bourbon- and rye-casks and receives a final finish in Pinot Noir barrels. The experimental WTF releases mature in selected Journeyman Bourbon casks for 2–3 years depending on the batch. Lowertown Black is described especially as aged in a casket, which is included in the series' aging descriptions.
Whiskies
The range spans a wide array: from vodka, gin and rum to liqueurs, moonshine, and a dedicated whisky category. In the whiskey area the portfolio includes the Lowertown bourbons, Vistula American Single Malt, and the experimental Whiskey Tango Foxtrot series, which are often distillery-exclusive. The products are designed with cocktails in mind — both in Bellwether and in the recipes the company publishes — but some releases are marketed as collectibles or store-exclusive bottles.

Whiskey styles and flavor profile
From the documented descriptions, a cross-section of character directions emerges: caramel and sweet malt, spicy notes and dark, roasted elements. Vistula explicitly mentions caramel, spicy and herbal sweetness notes as well as darker roasted tones. Lowertown 99 is described in recipes with caramel and spice character, while Lowertown Apple is used for apple-oriented cocktails. Taken together, the descriptions point to a base of sweeter bourbon elements, spice, and occasionally more robust, roasted accents.
