History

InchDairnie Distillery is located in Fife and positions itself as a whisky company that both honors Scottish tradition and challenges conventions with a modern approach. They focus on Fife provenance and a multi-dimensional approach to flavor through the three M’s: Materials, Method, and Maturation. Their communications highlight an ambition to drive flavor discovery and to use technology and overlooked influences to transcend tradition.

Production / Manufacturing

  • Mash and milling: The distillery uses a hammer mill instead of a traditional roller mill and a mash filter, as well as a mash conversion vessel. This enables higher extraction of flavors and sugars and makes it possible to handle different grain varieties, including rye, wheat, and oats.

  • Fermentation and heat: Fermentation takes place outdoors in washbacks and lasts about 60 hours, using different yeast strains depending on season and grain type. Thereafter the wort is preheated, and the distillation takes place in wash and spirit stills, where vapour is recirculated to save energy and improve flavor.

  • Distillation equipment: There are four copper stills (two wash stills and two spirit stills), and each still is equipped with two condenser systems for greater copper contact and removal of sulfur compounds.

  • Lomond Hill Still: This particular still (Lomond Hill) is designed for precise flavor localization and is used to distill special distillates such as rye, wheat, and oats as well as for the PrinLaws collection.

  • Maturation: Whisky is aged on site in various casks, primarily first-fill and second-fill bourbon barrels from the USA and PX/Amontillado/Manzanilla-inspired wine casks from Spain (Montilla region). The cask size is 250 litres to balance the liquid-to-wood ratio and the wine-to-spirit balance. RyeLaw vintages include select distillates such as RyeLaw 2017 and 2018, and some releases also use Muscatel wines.

  • Seasons and vintages: InchDairnie distills in four seasons (Spring, Summer, Autumn, Winter). RyeLaw is distilled for two weeks each year, and experiments such as oats, Wheat, 6-row barley, and Sour Mash are carried out under the PrinLaws category. Single Malt is expected to be vintage-based according to seasonally distilled spirits and aligned with a planned launch cycle in 2029. The first vintage was expected to be 2016.

Products / Whisky Series

  • InchDairnie Single Malt (Vintage concept): A single malt composed of five different stylistic spirit distillates from four seasons, plus two winter variants. The first full release as Signature Single Malt is expected in 2029, with a traditional vintage model that gathers four seasons and season-based branches.

  • RyeLaw series: RyeLaw Vintage 2017 and RyeLaw Vintage 2018 – Scottish Rye Whisky produced as part of InchDairnie’s efforts to challenge conventions around Rye in Scotland. Leven and other names in the Sample Room Range are referred to as ‘Single Distillery Rich Rye’ or similar Rye-focused expressions.

  • KinGlassie: KinGlassie Raw and KinGlassie Double Matured (Aged 8 Years) – a peated (smoky) single malt with around 50 ppm, where smoke and nutty notes weave with the distillery character. KinGlassie is part of their expressions and is closely tied to seasons and vintage thinking.

  • Balgonie, Leven and Pitkevy (Sample Room Range): These expressions are presented as part of a limited “Sample Room Range” with only 390 bottles of each expression, bottled at cask strength and non-chill-filtered, with descriptions emphasizing ‘Single Distillery’ character and Rye-inspired notes.

  • PrinLaws: First chapter in the PrinLaws collection – oats distillate and a mash bill with at least 51% oats together with malted barley. The spirit matures in a combination of ex-bourbon-conditioned casks and Portuguese Muscatel casks, and the concept includes that there has not been a clear Scottish regulation around oat whisky. PrinLaws is expected to be released as a series of chapters, with the oats chapter expected to be bottled in 2027.

  • The Sample Room Range: A limited edition line with specially selected tastings, offering a broad spectrum of flavor profiles from InchDairnie’s Sample Room. Each expression is bottled at about 58.2–58.5% ABV, non-chill-filtered, and only 390 bottles of each release.

Philosophy

  • InchDairnie describes itself as a whisky producer that seeks to challenge conventions within Scotch Whisky while respecting traditions. Their approach emphasizes a multi-dimensional focus on Materials, Method, and Maturation to achieve unique complexity and constant flavor discovery.

  • They combine traditional craftsmanship with advanced techniques and overlooked influences to create new flavors and to push the boundaries of taste through precise distillation and experimentation.

  • Climate and environment play a role in fermentation and aging, where outdoor fermentation in washbacks and the varied use of grain types together with seasonally selected yeast strains are used to create distillates with seasonal character.

Visit / Experiences

  • The Sample Room Range gives whisky enthusiasts the opportunity to experience a wide spectrum of flavor profiles in small volumes; they are marketed as limited bottlings (390 bottles each), bottled at high ABV and without chill-filtration to preserve maximum flavor intensity.
