Seven Brothers Distilling Co.
Overview of the Distillery
Seven Brothers Distilling Co. is located in Geneva, Ohio, and is a local, craft-oriented distillery that operates with a proprietary Low-Temperature vacuum distillation to preserve delicate, natural aromas. The distillery produces a range of handcrafted spirits — from bourbon and malt whiskey to gin and agave spirit — and welcomes guests in a tasting room with tastings, cocktails, and a dog-friendly patio.
History
The history starts in a large family brewing tradition. The founder began experimenting with making spirits at age 14, and over the years several siblings joined to develop recipes and techniques. In 2010, the founder took the step to establish a formal distillery. At the same time, he began a longer experimental phase with low-temperature vacuum distillation, a technique he has since perfected. Over more than a decade, the company has developed and built specially designed stills and refined the process, which today is a central hallmark of Seven Brothers’ production.
Raw Materials and Production
The raw materials are primarily local Ohio grains: corn varieties, wheat and malted barley, as well as selected local grains for malt whiskey. Each batch begins with freshly milled grains and blending with pure Ohio-sourced water. The technical center is a proprietary Low-Temperature vacuum distillation and infusion process, performed in specially engineered stills. The method is designed to preserve delicate aromas, allow infusion of botanicals, and focus on selecting the best "middle cut." The process requires time and patience, and it gives the distillery’s products a different approach than traditional high-boil distillation.
Whiskeys
The whiskey portfolio includes both bourbon and malt products. On the website, Hickory Smoked Whiskey (a wheat whiskey infused with hickory smoke), Wheated Bourbon (labeled as distillery-exclusive and made from Ohio corn, wheat and malted barley), Ohio Blue Bourbon (based on Ohio Blue Clarage corn along with wheat and malted barley) and American Malt Whiskey (made with selected local grains). In addition to whiskey, a broader range of spirits is also mentioned, such as gin, agave spirit, and rum. The products are distributed in OHLQ stores across Ohio and can be tasted in the distillery’s tasting room.
