Pennington Distilling Co.

Overview of the Distillery

Pennington Distilling Co. is located in the Nations neighborhood in Nashville and is a grain-to-bottle distillery established in 2011. The distillery produces small-batch premium spirits, from Davidson Reserve Tennessee Whiskey to Pickers and Walton's vodkas, as well as Whisper Creek Tennessee Sipping Cream. The facility combines local roots with technical processes such as column distillation and pot distillation.

History

Established in 2011, Pennington Distilling Co. has established itself as an independent, small-scale distillery in the heart of Nashville. From the outset, the company has worked with the entire process from grain to bottle and has continually expanded its range. The product family includes Pickers Vodka (produced from non-GMO corn in a column still), Walton's Vodka (from red winter wheat with initial pot distillation), Whisper Creek Tennessee Sipping Cream (blended with 100% aged Tennessee Whiskey and cream), and Davidson Reserve Tennessee Whiskey as the house whiskey expression.

Raw materials and Production

Pennington operates on a grain-to-bottle concept, using grains such as non-GMO corn and red winter wheat in-house. Pickers Vodka is distilled in a column still and is stated to be distilled 11 times, while Walton's Vodka is first pot-distilled in small batches, followed by refining in a column still and slow-drip filtration four times. The distillery uses Tennessee limestone water to adjust and dilute the spirits. Production is geared toward small-batch capacity and combines traditional pot methods with modern column distillation and filtration.

Aging and Barrel Types

The source material documents few concrete details about aging. It notes that Whisper Creek is made with 100% aged Tennessee Whiskey, and that Davidson Reserve is the distillery's Tennessee whiskey line. There is no specific information on barrels, finishes, or aging durations.

Whiskey

The range spans from Tennessee whiskey to vodka and a cream liqueur. Davidson Reserve forms the whiskey portion, Pickers Vodka is offered in several fruit variants and made from non-GMO corn, Walton's Vodka is a wheat-distillate with a combination of pot and column distillation, and Whisper Creek is a cream liqueur based on aged Tennessee whiskey.
