About the distillery

Old Glory Distilling Co. is a craft distillery in Clarksville, Tennessee, where the entire production takes place on its own campus. The distillery produces Tennessee Bourbon and whiskey from grain to bottle with locally sourced grain, small-batch methods, and the traditional Lincoln County Process—sugar maple charcoal filtration—as a central part of the production process. The site combines production with visitor experiences, a restaurant, and Silo Park.

History

The history of Old Glory is closely tied to founder Matt Cunningham, who returned to Clarksville with the ambition to create a local, craft distillery. The project grew from fascination to business over several years; Matt describes the process as a lifelong wish to create something for the town. The distillery has built a full production line on its campus, where today they mill, mash, ferment, distill, age, and bottle everything on-site. At the same time, the site has developed offerings for the public such as a restaurant, a bottle- and tasting shop, and Silo Park as a gathering point for events and live music.

Raw materials and production

The production concept is simple: the entire process takes place on-site and in small batches. The grain comes from local farmers, and the facility includes milling, mashing, fermentation, and distillation on-site. The distillery uses copper pot stills for, among other things, their vodka, and generally works in a pot-style for small-batch production. As a Tennessee distillery, Old Glory employs the classic Lincoln County Process, where the distillate is slowly filtered through sugar maple charcoal before it goes into barrels. Bottling, aging, and the final bottling also take place on campus, giving control over all steps in production.

Maturation and barrel types

As a Tennessee Bourbon producer, Old Glory adheres to the requirement of aging in new charred oak barrels, and they emphasize letting the oak barrels give the spirit time to mature. An important step in their routine is the filtration through sugar maple charcoal before barrel aging, the so-called Lincoln County Process. All aging/storage takes place at the distillery's own facilities, and the focus is on classic barrel use rather than rapid experiments.

Whiskeys

The portfolio centers around Tennessee Bourbon and Tennessee Whiskey, produced on-site in small batches. The company also offers a house-distilled vodka, which undergoes copper pot distillation and the same sugar maple charcoal filtration as the whiskeys. The products are marketed under the Old Glory name and presented as local, craft editions of classic Tennessee spirit categories.

Old Glory is open to visitors with guided tours and tastings, a bottle shop and tasting room, as well as a restaurant and Silo Park with dining and live music. Bottle Shop + Tasting Room has set opening hours throughout the week, the restaurant has separate hours, and Silo Bar has special evening hours.
