History

The story begins with Usama Ken, the founder of Niigata Beer Co. Ltd. and an experienced brewer with an interest in whisky. He developed the brewery early on, including by working with secondary bottle fermentation and maturation, and the ambition later became to create a local whisky distillery that could showcase the quality of Niigata’s pure water. In 2017, he obtained the first whisky license in Niigata, and thus took a step into the world of distillation. The distillery was still under construction, but the first whisky idea was made concrete in Shinobu Mizunara Oak Finish. From the beginning, the project was shaped as a meeting point between Japanese taste and the international whisky world.

Ingredients and production

Shinobu is closely tied to Niigata’s local ingredients and especially to the area’s pure water.
