Karuizawa Distillers, Inc.
About the distillery
Karuizawa Distillers is a Japanese whisky producer in Komoro at the foot of Mount Asama. Here, forest, clear water, a cool climate, and high humidity are combined in a landscape that the company itself highlights as particularly well-suited for whisky. The project was created with the ambition to bring together craftsmanship, place, and a clean, flavorful Japanese single malt.
History
Karuizawa Distillers was founded in 2019 by entrepreneur Takashi Shimaoka and master blender Ian Chang. From the beginning, the goal was clear: to create the best Japanese single malt whisky. Shimaoka had searched for a long time for the right location for a distillery, and in Komoro he found an area where nature could become part of whisky’s very identity. Ian Chang came with experience and a desire to work in a new environment, and the collaboration between the two became decisive to the project’s form. In 2023, distillation began—thereby giving the practical realization of the vision real momentum. At the same time, the company emphasizes that it’s not only about building a distillery, but also about creating whisky experiences and a place where craftsmanship, people, and local nature fit together.
Raw materials and production
Production is described as a balance between technical know-how, care, and the special natural conditions in Komoro. The company particularly highlights the clear water that runs from the forests near Mount Asama, as well as the cool air and appropriate humidity as an ideal environment for whisky. The goal is a clean yet still flavorful Japanese whisky, and emphasis is placed on the fact that the people who work with the whisky bring craftsmanship and dedication. The material does not go into detail about raw materials, malting, mashing, fermentation, or distillation equipment, but it is clear that the site and climate play a central role in the desired style.
Maturation and cask types
No concrete information is provided about cask types, maturation lengths, or specific finishing processes. The only clear clue is the company’s clear stance on casks: an official warning is issued about cask sales, and it is emphasized that casks are not sold through intermediaries. Otherwise, the focus is on overall quality, craftsmanship, and the nature in which the whisky is meant to develop.
Visit the distillery
There is a visitor center next to the distillery, so the public is considered as part of the site. The company describes that guests can get whisky experiences and experience the connection between the distillery, craftsmanship, and the local landscape. The visitor component is also intended to strengthen the connection to the area for both Japanese and international guests. The material does not provide fixed information about opening hours, booking, or specific tours and tastings.
Philosophy and craft
Karuizawa Distillers builds its identity on a clear mission to make whisky of the highest quality. At the same time, the guest should be able to feel the maker’s care in the experience, and the production should be connected to the nature around Komoro and to the local community. The company also works with a stated goal of minimizing waste and maintaining a more responsible relationship with forests and the environment.
Sustainability
The goal is to achieve zero waste in production.
The company collaborates with forest protection and forestry education organizations.
A portion of revenue must go to forest protection and educational programs.
