Overview of the distillery

Glen Moray is a Speyside distillery in Elgin that has been producing single malt Scotch whisky since 1897. The site is known for a light and approachable house style, but also for an unusually broad approach to casks, ranging from classic American oak casks to more experimental wine and specialty casks. This makes the distillery interesting both for those wanting an insight into the Speyside tradition and for those following the development of modern cask work.

History

The story begins in 1897, when Elgin West Brewery is converted into a whisky distillery, and the first spirit runs from the stills on 13 September of the same year. The first new make is filled into casks, including marsala and sherry casks, and from the start the use of different casks has been part of the identity. After a short quiet period during the First World War, production starts again in 1920, when the distillery is also bought by Macdonald & Muir. In the 1950s, the site is significantly expanded with Gallowcrook Farm, new copper stills, a new still house, modern maltings, and new warehouses. In 1987, production switches to seven days a week, and in 1999 the first wood-finished whiskies are launched. Since then, the Classic Collection follows in 2014, the Heritage Collection in 2016, and the Curiosity Collection from 2018, showing how the distillery both holds on to tradition and continues to try new cask types.

Raw materials and production

Glen Moray makes single malt Scotch whisky from malted barley and water in copper pot stills at a single distillery. The barley is malted by steeping it in water, letting it germinate as green malt, and then drying it in a kiln with warm air. For Peated Single Malt, part of the barley is dried with peat smoke, which gives it a smoky style. The mash is made in a large mash tun with water from the River Lossie, heated to around 64°C, and fermentation takes place in washbacks for 60 hours, where the yeast creates alcohol as well as fruity and floral esters. Distillation occurs in three wash stills and six spirit stills, and only the desired heart is taken through the spirit safe, before the spirit is filled into casks for maturation.

Maturation and cask types

Maturation takes place in the distillery’s warehouses, where the climate is described as relatively stable throughout the year because the area is protected by the nearby Cairngorm and Monadhliath mountains. Glen Moray mainly uses American oak, but also works with many other cask types and with finishing in, among other things, port, wine and sherry casks. The tradition of cask marriage and blending contrasting whiskies is a clear part of the house method, and in the Curiosity series more unusual casks and small-batch experiments are used, such as the Rhum Agricole Cask Finish Project.

Whiskies

The core of the range is the Classic Collection, which showcases the light, smooth and fruity Glen Moray style and includes, among others, a Peated Single Malt. The Heritage Collection brings together the more matured expressions, including 12, 15, 18, 10 Fired Oak and 21 Year Old. In addition comes the Curiosity Collection, where the distillery takes a more experimental approach with limited releases, as well as Warehouse 1 and Signature Travel Retail, which are also part of the house’s overall whisky universe. The range therefore spans from inviting everyday single malts to more distinctive cask expressions.

Whisky style and tasting profile

Glen Moray’s style moves between light, smooth and fruity expressions and deeper or more distinctive ones. The Classic emphasizes fruitiness and a soft, easy-drinking character, while fermentation contributes fruity and floral compounds. On the other hand, the Peated Single Malt features a clearly smoky profile, and the Curiosity release Rhum Agricole Cask Finish Project shows spice and dark toffee. Overall, it points to a whisky profile where fruit, flowers, smoke and cask influence work together.

Visiting the distillery

Glen Moray can be visited in Elgin, and guided tours are offered where guests can learn about the history all the way back to 1897 and see how malt whisky is made. The tours can be booked online, and a special detail is that the guide may be one of the distillery’s own craftsmen. This makes the visit more personal and provides a direct meeting with the place and the work behind the whisky.

Glen Moray clearly draws on both tradition and curiosity. The distillery highlights a practice with many different casks, reaching back to the first spirit in 1897, while also placing emphasis on generational knowledge in the work of maturing and marrying casks.
