Auchtertool lies high above Kirkcaldy in Fifeshire, and is one of the Scottish sites where brewing and whisky history are intertwined. The site was built as a brewery in 1650 and, in 1845, switched to whisky production. It was especially noted for its size, its own malting, and the two large pot stills, which made it a distinctive production site in the area.

History

Auchtertool began its life as a brewery in 1650 and, for many years, developed a reputation as a place that supplied high-quality beer in Fifeshire. After several generations with uncertain history between the late 1600s and the mid-1800s, the site was taken over in 1845 by a new, enterprising distiller who saw opportunities in the district’s water and buildings. In this way, the site’s character shifted from brewery to whisky producer.

In the following decades, the plant was continually expanded. Around 1926, it appeared as a significant industrial complex with malt buildings, a mashery, wash-backs, a stillhouse, and large warehouses. At some point, the operation was handled by Mr. Bartholomew, then by Mr. Thomas Sanderson from Leith, and afterward by Auchtertool Distillery Co., Ltd. Manager M. Young came to the site after 25 years at Bo’Ness Distillery. The story of Auchtertool is therefore also the story of a site that grew from a local brewery site into a fully developed Scottish distillery.

Raw materials and production

Production was based on barley, the majority of which came from Fifeshire. The malt was made on site in large malt buildings with four storeys, two barley lofts, two malting floors, and two cast-iron steeps. The barley was carried up by elevator to the upper floors, cleaned, handled via conveyors, and milled on a Porteous mill, before it went on to grist hoppers and the mashery.

The mashery had two heating tanks and a 16-foot diameter mash tun with steel mashers and spargers. It mashed 1,600 bushels per week, and the worts were cooled, pumped onward, and conveyed to six wash-backs of 10,000 gallons each. The stillhouse had two stills: a wash still and a spirit still, and the site used both a wash charger and separate receivers. The water came from Moss Morne via reservoir and pipes, which gave a clear local anchor in the physical production.

Maturation and cask types

The whisky was laid down in three large warehouses, which together held 9,000 casks and could be expanded to around 14,000. This indicates a facility with the capacity for both continuous production and longer maturation.
