About the distillery

The Ardross Distillery is located in the northern Scottish Highlands and is built on the ruins of a farmhouse from the 19th century. Here, Loch Dubh, long fermentations, six Douglas fir washbacks, and two tall copper stills come together in a production that aims for a sweet, fruity whisky with both lightness and complexity. It is a place where landscape, water, and craftsmanship are made the very starting point.

Raw materials and production

The production is based on Scottish barley, which is worked into the malting process with leading maltsters according to the distillery’s precise specifications. The entire whisky process is supplied with water from Loch Dubh. The fermentation is carried out with proprietary yeast in six Douglas fir washbacks, and it lasts over 120 hours. It is a deliberate long fermentation, chosen to promote vivid fruit notes and a rounded sweetness. Distillation takes place in two tall, elegant copper stills, and both the wash still and spirit still have reflux balls. This detail on the wash still helps create a spirit style that combines lightness and complexity. Ardross also works with both unpeated signature spirit and spirit produced on smoked malt, which provides a certain flexibility without changing the underlying direction. Overall, the production is built around control, raw material quality, and a clear understanding of the importance of copper and fermentation.

Maturation and cask types

Maturation takes place in wood from the USA, Spain, and Japan. The distillery emphasizes that the casks chosen for Ardross spirit must be among the finest examples of their kind, and that relationships with the suppliers span three decades. It is an approach where the quality and character of the wood matter greatly, and where selecting casks is a central part of the work.
