History

Nc’nean began distilling in 2017 on the Morvern Peninsula. It was the start of a project that from the beginning was driven by the desire to combine whisky craftsmanship with a more sustainable approach. In 2019, Sarah and Simon Hewitt joined the distillery—before the whisky was mature enough to sell—and they have since been central to the day-to-day operations: Sarah has been responsible for bottling, while Simon has worked on distillation, chipping and warehousing. In 2023, bottling moved to a new dedicated bottling hall. At the same time, the distillery has developed its two large limited series, Huntress and Quiet Rebels, where different yeast experiments, cask choices and employee stories are used to explore new sides of the house style.

Ingredients and production

Nc’nean works with organic Scottish barley as its base ingredient and describes the use of long mashing and fermentation times as an important part of the style. Fermentation is an area with a great deal of experimentation, and the distillery uses yeast types that are not always seen in whisky production, including a yeast strain from Belgian beer brewing and a yeast type from French sparkling wine production. The flagship whisky is unpeated, and distillation takes place in copper pot stills powered by 100% renewable energy. The result is a spirit with delicate, fruity notes, which deliberately stays elegant rather than smoky or heavy. Small-batch releases are part of the house’s work, and several releases build on the same core principles, but with different yeast selections and cask compositions.

Maturation and cask types

Nc’nean matures especially in STR red wine casks, American whiskey barrels or casks, and Oloroso sherry casks, and the classic cask combinations show up in both the core range and special releases. The Cask Strength edition uses the same basic idea as the flagship, but with higher strength and the same type of cask blending. In the Huntress series, the documented yeast experiments are used together with the house’s cask style, and in Quiet Rebels Simon the whisky moves on in stout casks from Innis & Gunn after the first maturation in STR red wine casks. Aon 17-163 shows the more stand-alone side of the work with a Madeira cask, and is selected as a single-cask bottling.

Whiskies

The core range consists of the organic single malt, the cask strength edition, and the organic botanical spirit. In addition come several limited editions, especially the Huntress series and the Quiet Rebels series, as well as a few single cask releases such as Aon. What’s shared across the whiskies is a clear, fruity and elegant house style, but the range also shows how Nc’nean works with different yeast types, cask combinations and small-batch variations. Whisky style and tasting profile

Across the whiskies, there’s a clear line of citrus, peach and apricot, often accompanied by lemon peel, lemon sorbet or tangy lemons. In addition come sweeter notes such as honey, fudge, toffee, jam and crème caramel, along with a fresh, floral touch with chamomile, green apple and fresh floral notes.
