The Distillery is a Danish micro-distillery in Brande, closely connected to the Central Jutland heath, with whisky as a clear part of its expression. Here, local ingredients, water from deep springs beneath the heath, and traditional distillation methods meet modern innovation. The result is a range of single malt releases with a distinct cask character—ranging from honey-matured cask versions to Oloroso, bourbon, Virgin Oak, and Pedro Ximénez.
History
The Distillery takes its starting point in the Central Jutland heath and describes itself as one of Denmark’s smallest distilleries. The heath is not only a geographical starting point, but also part of the identity: the logo is the wild bird Arne, king of the heath, associated with the hunt for juniper berries, porse, and other local ingredients. The distillery says that these ingredients could already be tasted in the products back in 2021. At the same time, water from some of Denmark’s cleanest and finest water sources, deep beneath the heath, is used—and it leaves its mark on the spirit. The whisky story evolves from the first releases in the series to versions with clearer cask choices, and Branderiet Whisky No. 3 is marked as the first whisky created after the signing of the Danish whisky manifesto. With No. 4, the series continues with Virgin Oak and Pedro Ximénez, while the cask-owning (“fadejer”) journey opens the way for a more direct role in the maturation of its own whisky.
Ingredients and production
The Distillery’s whisky is built on local ingredients from the Central Jutland heath and on a production process that blends tradition and innovation. During the cask-owning (“fadejer”) journey, the New Make is created on Fuglsang Pilsner Malt and distilled according to the principles of the Danish whisky manifesto. It is filled into casks at 58.5% alcohol, and from there, time, wood, and community continue the work with the spirit. The distillery also describes the water as a central ingredient in the making—both for extracting aromas, during distillation, and for dilution. In the whisky series, it is especially the cask choices that define the expression: Oloroso and bourbon form the backbone in No. 2, the 1st fill version extends and deepens the same path, No. 3 combines bourbon with a Pedro Ximénez finish, and No. 4 uses Virgin Oak before finishing on small PX casks. The cask-owning (“fadejer”) journey uses 30-liter Private Casks, where ownership can be shared, and where only six casks are released.
Maturation and cask types
Maturation is a clearly central element for The Distillery. No. 1 is matured for three years in own oak casks, matured with prize-winning flower honey from Blåhøj. No. 2 is kept for three years on Oloroso and Bourbon casks, while the 5-year edition uses 1st fill Oloroso and Bourbon casks and is referred to as the distillery’s first limited batch. No. 3 is matured on bourbon casks and finished on small Pedro Ximénez sherry casks, and No. 4 starts on a powerful 100-liter Virgin Oak cask and is later finished on small 30-liter Pedro Ximénez casks. In the cask-owning (“fadejer”) journey, standard maturation is three years, and there is the option for both additional aging and finishing on new cask wood for 3–9 months.
Whiskies
The whisky range spans from the honey-matured No. 1 over No. 2 in both the standard and 5-year limited version, to No. 3 and No. 4 as the current core names in the lineup. The series is centered on single malt and shows a clear movement from more classic bourbon and sherry notes toward expressions with more wood influence and more marked contrast between raw spirit and finishing. No. 5 is also part of the range in the category, but without details in the material underlying it here. Overall, the assortment depicts a whisky where cask selection and maturation are decisive for the character, and where each edition retains a shared, Danish rootedness.

The style and tasting profile of the whiskies
The Distillery’s whiskies revolve around honey, dried fruit, dark fruits, nuts, vanilla, caramel, and a clear oak note. No. 1 balances the sweetness of honey against the dryness of the oak, No. 2 leans toward fruit, nuts, vanilla, and caramel, No. 3 emphasizes dried fruit, dark caramel, and sun-ripened raisins, and No. 4 adds dark chocolate, vanilla-sweet oak, and spiced warmth. This results in a style where sweetness and structure are kept in check by wood and dry cask notes, while the most cask-influenced editions draw in a darker and more spiced direction.
