Short description of the distillery

Brandbygegaard is located in Odder and is a regenerative farm with organic niche production, where the farm's own produce is turned into wine, spirits and cider. The place is interesting for whisky lovers because production is closely tied to soil, raw materials and craftsmanship, and because the farm also offers tastings, tours and events within the same setting.

Raw materials and production

Production is based on the farm's own land, where the produce is cultivated with a focus on biodiversity and nature development. Apples are harvested only when fully ripe, just before they drop, and are allowed to ripen further in wooden crates for a couple of weeks before being crushed into pulp. Fermentation takes place cool with wild yeast from the surface of the fruit and a carefully selected yeast strain, first as alcoholic fermentation and then as malolactic fermentation. The whole process is conceived as small-scale work, with no spraying, no synthetic fertilizers, and much of the work carried out by hand or with small machines. White clover fixes nitrogen in the rows, and cut grass and clover are left as nourishment for the trees. When wine is further fermented in bottle, a little sugar is added, and it ferments again cool according to the Champagne method, before yeast and lees are removed by disgorging.

Maturation and barrel types

The material describes bottle fermentation and disgorging more than actual barrel ageing. The wine can be ready for sale from half a year to five years after the last fermentation, depending on further processing. The cool, long fermentation is a central technique used to create a nuanced and complex expression.

Whiskies

The range spans the farm's own wines, spirits and cider, and tastings are also offered including whisky, brandy and gin. The documented profile is limited production based on the farm's own raw materials and handling from soil to finished product. This yields a selection closely tied to the farm's own cultivation and season, rather than a large standardized portfolio.

Visit the distillery

Brandbygegaard welcomes guests for tours, lectures and tastings of cider, wines, whisky, brandy and gin. The farm is also used for concerts, dining experiences and private or corporate events. The community hall is cozily renovated and heated, and it works best with up to 80 guests. Inquiries are answered on weekdays within 24 hours, and events are arranged directly via email.

Philosophy and craft

Brandbygegaard operates from thoughtfulness, care and understanding. The farm highlights a holistic way of farming where production and nature development must be in balance, and where the raw material is treated with respect from soil to glass. Regenerative cultivation, biodiversity and limited small-scale production are the clear values.

Sustainability

Only 1/10 of the 25 hectares is cultivated, while 9/10 is dedicated to nature.
The area includes lakes, ponds, wet meadows, permanent grassland, untouched forest and newly planted trees.
Over the year the farm is an energy self-sufficient unit based on a 20 kW solar panel system.
The electricity is used for heating, cooking, beer brewing and distillation.
