History

New Year's Eve 2013 marked the start of it all. Two friends, Christian and Patrice, were out walking in Aubrac and were inspired to make their own whisky in Aubrac. Four days later they met Florent Caston, a young trader of fine spirits. During the conversation, which began in the shop, Florent's enthusiasm helped turn the dream into reality. A few days later Christian and Patrice met some of their close friends. A group of 12 people was quickly formed. The twelve founders decided in May 2014 to establish their own distillery in Laguiole, with Florent as technical leader. The aim: to produce whisky of the very highest quality. The distillery was named Twelve – just like the number of friends. Today Twelve consists of a small team and a strong local identity in Aubrac.

Production

Distillation and aging

Our whisky is made in Presbytery of Angels in Laguiole. The distillery and the stills are designed to produce whisky in a historical setting. The water from Aubrac provides purity, and our Stupfler still is specially designed for Presbytery. After a double distillation the spirit reaches 68–70% alcohol. From about 600 litres of wash we obtain about 50–60 litres of spirit.

Aging and cask use

The whisky ages for at least 3 years in oak casks. We use more than 30 types of casks – some new, others previously containing French wines, Port, Cognac or rum. The type of cask gives different characteristics: structure, roundness and tannins. Florent draws the best from each cask to create unique, elegant and balanced single malts.

Filtration and color

All our whiskies are produced, distilled, aged and bottled in Presbytery of Angels in Laguiole. We do not filter and do not add additives. The natural color derives solely from aging.

Visits

Tours of our whisky distillery are offered year-round. A 45-minute guided tour, €5 per person, can be deducted from the purchase of a bottle. Private visits can be arranged by inquiry.
