Teeling Whiskey Distillery is located in the heart of The Liberties in Dublin, and is a modern city distillery with deep historical roots. It opened in 2015 as the first new distillery in the city in over 125 years, and is close to the family’s original distillery at Marrowbone Lane. Here you’ll find both production, guided tours, tastings, and a bar, so the visit is as much a whisky experience as it is an insight into Dublin’s distilling history.

History

The Teeling name in whiskey dates back to 1782, when Walter Teeling established a small craft distillery on Marrowbone Lane in Dublin. Since then, the family has been connected to both craftsmanship and entrepreneurship, and in 2012 Jack and Stephen Teeling took the next step and began putting their own stamp on Irish whiskey. Three years later, they opened Teeling Whiskey Distillery in The Liberties, just a few streets from the family’s old distillery, and thus Dublin became home to a new working distillery again after more than 125 years without any new build. Since opening, the distillery has received more than 20 awards and recognitions, including “Best Visit in Ireland” in 2019 and “Sustainable Distillery of the Year” in 2022. The story is therefore both a family tale and a revival of Dublin as a whisky hub.

Raw materials and production

Teeling works with several grain and malt profiles, and the range clearly shows that the distillery likes to do things its own way. Malted barley, crystal malted barley, unmalted barley, and corn are used, and the raw materials are described as sustainable, with malted barley from Minch Malt and unmalted barley from Glanbia. The distillery emphasizes that the whisky is not chill-filtered before bottling, so body, character, and fullness are preserved in the glass. Several expressions are bottled at 46% ABV, the house’s signature strength, while others are bottled at higher strength. In the product descriptions, you’ll encounter both triple distillation and column distillation, and some expressions get double fermentation with Distillers Yeast and White Wine Yeast. It’s a distillery that clearly uses the processes actively to create variation between its expressions.

Maturation and cask types

Maturation is one of Teeling’s most important tools. The range shows maturation and finishing ranging from Virgin American Oak and Bourbon to port-, Madeira-, sherry-, Rioja-, and Cognac casks. The Single Malt expression uses five different cask types, and Single Grain matures in American red wine casks, which gives a distinct tannic profile. The 15-Year Old Single Grain first undergoes bourbon maturation and then secondary maturation in Bordeaux Sauvignon Blanc casks, while a 20-year-old single malt is finished in a Cognac cask. Teeling uses the casks to build fruit, spice, vinous depth, and a dry structure into the whisky rather than letting one style dominate.

Whiskies

The core of the range is Small Batch, Single Malt, Single Grain, and Single Pot Still— all described as award-winning whiskeys, and several of them bottled at 46% without chill filtration. Small Batch works as the house’s signature and also serves as the basis for special editions such as Sommelier Selection Rioja. Single Malt is fruity and built across multiple cask types, Single Grain has a more vinous and tannic profile, and Single Pot Still represents the classic Irish style in the house’s Dublin interpretation. In addition, there are limited releases and exclusive expressions such as Crystal Single Malt, 15-Year Old Single Grain, 11th Birthday Batch, and a range of distillery exclusives, showing how much the distillery uses cask selection and age to expand the palette.

Whisky style and tasting profile

Teeling’s whiskies move between green apples, pears, citrus, and grapefruit on the one hand and darker berries, red grapes, and tropical melon on the other. In addition, there’s clear malt and honey sweetness, vanilla, toffee, and caramel, along with a spicy trail of pepper, cinnamon, nutmeg, and oak spice. Some expressions also develop a vinous dryness with tannins and a slight mineral note, while others round off with chocolate, pastry, and butterscotch. Overall, it’s fruity, spicy, and often slightly wine-influenced.

Visiting the distillery

Teeling is open to the public and offers fully guided tours seven days a week. Tours run every 20 minutes and give access to a fully operational distillery, where guests follow the entire whisky process from milling and mashing to maturation, before the experience is rounded off with a tasting. Different tasting experiences are offered for both beginners and more experienced whisky lovers. On site you’ll also find the Bang Bang Bar, Phoenix Café, a shop, as well as the option of private tours for groups of 15 or more and private events in six different rooms. Opening hours are Monday to Friday 11–18, Saturday 11–19, and Sunday and bank holidays 11–18.

Philosophy and craftsmanship

Teeling’s philosophy is to do things differently and let the whisky speak for itself. Innovation is a key word, and it’s seen in the unusual mash bills, in the use of multiple fermentation types, and in the many different cask combinations. At the same time, the distillery sticks to a natural style without chill filtration, with a focus on preserving as much character as possible. Sustainability is also a clear part of the value base, both in raw material selection, water usage, and energy use.
