Clonakilty sits out on the very southwestern coast of Ireland in Clonakilty, County Cork, where the Atlantic Ocean meets the land. It is a family-rooted distillery with roots in nine generations of farming, and it builds its whiskey on homegrown barley, artesian spring water, and a distinct maritime location. History

Clonakilty’s history begins with the Scully family’s long ties to the land. The family has cultivated the same plot for nine generations, and the distillery was born out of the desire to turn that experience into a whiskey that both respects tradition and works more sustainably. Michael Scully was the driving force behind the idea, while Helen and Padraic were also among the early movers behind the project.

From the start, the plan was to do things in-house. The family began growing heritage barley themselves, sourcing water from a deep artesian well in the rock formation, and building a distillery where the entire process—from raw material to bottling—could be controlled internally. In 2024, an important breakthrough came when Clonakilty launched its first single pot still Irish whiskey in a limited inaugural release. At the same time, the distillery also made its mark with award-winning special releases and a clear profile that has earned it a place among the most ambitious newer Irish whiskey houses.

Raw materials and production

Clonakilty works with barley as the central raw ingredient, and the distillery uses both malted and un-malted barley. The barley comes either from the family’s own farm by the sea or from local farmers in County Cork, tightly linking the raw material to the region. Fermentation lasts for over 100 hours, far beyond the industrial standard level, and it is a deliberate choice to develop more natural layers of flavor.

The distillation takes place in long-necked stills, and the spirit is triple-distilled to create a lighter and more refined style. Before cask filling, the new make spirit is diluted with clean spring water from the deep artesian well. After cask disgorging, the whiskey is slowly adjusted to bottling strength over up to two weeks, and bottling also happens in-house. This gives the distillery full control over the final result and reinforces a production approach where every part of the chain is carried out under the same roof.

Maturation and cask types

Maturation takes place in a warehouse overlooking the Atlantic Ocean, and the maritime air is an intentional part of the house profile. The distillery itself describes how the air affects the casks and gives the whiskey a distinctive character. The foundation is oak casks, and the approach is patient: the whiskey must be allowed to rest for as long as it requires—even when that means the casks lose their share along the way. It’s a simple yet clear coastal maturation, where the surroundings are allowed to work on the spirit.

The range includes both whiskey and other spirits, but the whiskey side is especially known for special releases and the first in-house single pot still release. Clonakilty’s whiskeys move between single pot still, single malt, and cask-finished special editions, often with limited batches and collaborations with breweries or other partners. The common thread is a style that emphasizes purity, texture, and a distinct maritime identity rather than a heavy grain or smoky profile.

Whiskey style and flavor profile

Across the documented releases, softness and purity repeat as a theme, supported by a lighter, sweeter spirit from triple distillation. In the O’Hara’s Cask Finish Special Edition, the whiskey shows chocolate, fruit and spice notes and a rich mouthfeel, while other descriptions highlight smoothness, refinement, and a velvety texture. Together, this paints a picture of a whiskey where fruit, spice, and fullness meet a fresher, more maritime elegance.
