About the distillery (Brief)
Croithlí Distillery is located in the small Gaeltacht town of Croithlí in Donegal, all the way out in the northwest corner of Ireland. Here, the whisky story is tightly bound to the place: a historic building from 1901, water from the River Crolly, and a distillery that works with direct fire beneath the copper stills. It is a small, ambitious Irish whisky distillery with a clear local grounding and a style that seeks depth over polish.
History
The building that today houses Croithlí Distillery was built in 1901 by the Congested Districts Board to counter poverty and emigration in Donegal. Soon after, it became home to the world-famous Donegal Carpets; later, it served as a barracks during Ireland’s independence struggle, and from the 1940s to the 1970s, it housed the factory where the beloved Crolly Dolls were made. Each era left its mark on the building and kept it alive as part of the local community.
The whisky chapter began with three local founders who wanted to bring Irish whisky back to Donegal after 180 years. They went on a fact-finding trip to Islay, found old copper stills in France, and had them restored for a new life in Croithlí. Under Master Distiller Julio Diana and his team, the old building was transformed into a flame distillery, and with Donegal’s first whisky licence in 180 years, a sleeping tradition was awakened again. Today, the house continues as home to small-batch releases that build on both the place’s and the craft’s history.
Ingredients and production
The production is based on clean water from the River Crolly, which runs from the Derryveagh Mountains just a few meters from the distillery. The distillery uses Irish-grown grain, including premium malted barley as well as special malts such as crystal and chocolate. The most distinctive approach is direct fire beneath elegant Charentais copper stills from France, previously used for cognac. This creates a particular Maillard reaction in the spirit and contributes to extra depth and complexity.
All whisky is distilled twice, and it is a deliberate choice to preserve the malt’s fullness while also giving a cleaner, more defined flavour. Croithlí also works without chill filtration and without artificial colouring, so the whisky retains its natural character. The entire process is designed as grain-to-glass in the Donegal Gaeltacht, with small batches and a clear grounding in local ingredients and craftsmanship.
Maturation and cask types
The whisky matures on site in Croithlí’s cool, temperate microclimate. The range shows a clear focus on selected oak types and classic sherry and bourbon profiles: first-fill bourbon barrels, Oloroso sherry butts, virgin oak, and Pedro Ximénez finishes. The distillery also uses a whole series of single-oak expressions in the Coillín Darach series, where American white oak, European oak, and sessile/Irish oak each play their own role. The result is maturation where each cask can imprint its own character on the expression.
Whiskies
The current range centers on a handful of clearly defined whiskies. Croithlí Single Malt is the house edition, with bourbon and virgin oak as the foundation. The Coillín Darach series explores the character of oak in three directions: Quercus Alba, Quercus Robur, and Sessile. In addition, there is Oloroso Single Cask, which provides a darker and more concentrated single-cask expression, as well as Personalised Distillery Reserve, which is a peated single malt. Limited edition releases such as PX Single Cask and Cask 2 show that the distillery also works with more rare, collector-oriented bottles.

The whisky style and flavour profile
The style leans toward malty sweetness, warm oak, and spice, with clear vanilla and sweetness from the bourbon casks. The sherry-influenced releases contribute darker fruit and a deeper, more concentrated character, while the PX expression points toward a richer, darker sweetness. In the peated version, smoke appears as a distinct note, but it is still wood, malt, and fullness that hold the house profile together.
Visit the distillery
Croithlí can be visited, and the experience is built up as a fully guided journey through the history, the stillhouse, and the whiskey lounge. It is open seven days a week, and guests can choose Tour & Tasting with a new-make sample and a whisky sample, an extended Tour & Tasting Upgrade with three whisky samples, or a Premium Experience with VIP tasting and a personalized, hand-filled bottle of cask strength whisky. There is also The Distiller’s Board from Friday to Sunday, as well as a whiskey & craft shop, private whiskey tastings, Bottle Your Own, and a bar/café.

Philosophy and craftsmanship
Croithlí’s philosophy is clearly laid out: direct fire, double distillation, local ingredients, and respect for the raw spirit before everything else. The distillery wants to preserve the whisky’s natural integrity, so neither chill filtration nor artificial colouring is used. At the same time, there is a strong local and historical focus, where Donegal, the Gaeltacht, and the old Irish distillation heritage are not just a backdrop, but an active part of the house’s decision-making.
