About the distillery

St. Patrick’s Distillery is located in Douglas in Cork and combines a family history that goes back through generations on Croagh Patrick in Mayo, with modern production of Irish whiskey, gin, vodka, and cream liqueurs. The whiskeys range from classic blends to single malt, cask aged and cask strength, and the house has distinguished itself with both medals and a clear sense of cask finishes.

History

For at least 12 generations, the Walsh family has cultivated the land on the slopes of Croagh Patrick in Mayo. In the 1901 census, the earliest available record shows Patrick Walsh as a tenant farmer in a small thatched house, but the family’s real reputation was tied to the production of poitín and a turf-fired copper still, which could be hidden in the misty landscape. The tradition was carried forward through the generations and was later raised into a legitimate business when the company was founded in April 2014 under the name An Práta ion Teoranta. Already in August of the same year, the name was changed to St. Patrick’s Distillery Limited, and in 2015 the products began to take shape in earnest with the launch of Potato Vodka, Potato Classic Juniper Gin, and later Oak Aged Irish Whiskey. Exports to more markets followed, along with Origin Green status in 2016 and a series of prizes that have made the distillery a visible player in Irish spirits.

Ingredients and production

St. Patrick’s works with small batches and builds its whiskeys on a simple yet flexible core idea: triple distillation in Ireland, the use of grain and malted barley in several of the expressions, and naturally soft water for at least one of the whiskeys. The classic style is complemented by single malt expressions, a peated variant with lightly peated malted barley, and a blend that includes grain, malt, and pot still whiskey. The distillery also emphasizes that the whiskeys mature in bonded warehouses and that hand-selected casks are used. What gives the house its distinct character is especially the combination of first-fill bourbon barrels and subsequent finishes in port, sherry, rum, or cognac. At the same time, clear technical variation is shown across the range: some expressions are non-chill filtered, others are limited editions or individually numbered, and work is done with both classic maturation processes and more complex blends of younger grain and older malt.

Maturation and cask types

Maturation consistently begins in first-fill bourbon barrels across multiple releases, and then the character is built further in selected finish casks. Port, sherry, and cognac recur as clear finishes, while rum is also mentioned as an option in the distillery’s general whiskey profile. In addition, European Oak Tawny Port Casks from the Douro Valley in Portugal are used, along with double-charred casks from Kentucky bourbon distilleries—pointing to a deliberate use of both American and European oak. The 21-year expression reflects a more patient approach, where the spirit was laid down in first-fill ex-bourbon double-charred American oak and later recasked in year 10 to build depth and complexity.

Whiskeys

At the heart of the whiskey range is a classic Irish blend, several single malts, and a set of matured expressions with clear cask finishes. The most accessible end includes Classic Irish Whiskey and 7 Year Old Irish Whiskey, while Single Malt Bourbon Cask Aged, Single Malt Cognac Cask Finished, and the peated single malt show the distillery’s interest in pure malt character and prominent cask-finish character. Also included are 10 Year Old Sherry Cask Finish and 12 Year Old Port Cask Finish, which move the range in a more mature direction. On the more robust side are Cask Aged and Cask Strength, and the limited releases such as John Aldridge 1994 Edition, Shandon Bells, and Ballyhooly Blue Ribbon add variation and tie together the threads between brand story, history, and collecting interest.

Whiskey style and tasting profile

Common to many of the whiskeys is a style that combines fruit, sweetness, and clear cask influence. In the classic blend, you meet toasted oak, honeyed grain, orange zest, sultanas, toffee, and vanilla, while the 7-year whiskey heads toward fresh, clean aromas, floral notes, and subtle spice. The 10-year sherry finish leans toward baked fruits, honey, cloves, rich vanilla, and citrus zest, and the peated single malt adds smoke, heather, wild fruits, and smooth honey. Overall, the expression lands between soft sweetness, spiced wood, and a more pronounced smoke in the peated version.
