Great Northern Distillery is located in Dundalk in Co. Louth and is a large, independent Irish distillery focused on whiskey spirit, bulk supply, and its own brands. History
Great Northern Distillery is part of the modern Irish whiskey resurgence that took off in the late 1980s, when John Teeling established Cooley Distillery. Later, a new wave of Irish distilleries followed, and Great Northern Distillery became part of this development. The distillery has been in operation since 2015 and is described as Ireland’s largest independent distillery. Behind the company is a private firm whose owners previously established Cooley Distillery and rebuilt Kilbeggan Distillery before selling them in 2012. The distillery’s first 3-year-matured whiskey reached its age in 2018, and in 2017 the first consumer release under the Burke’s name arrived.
Raw materials and production
Production is based on Irish malted barley, unmalted barley, maize, and peated malt. The barley is described as being malted at a malting plant, and the incoming grain quantity is screened, milled, and mashed, before yeast converts the sugars in the wort into alcohol. For malt and pot still spirit, copper stills are used, where wash is heated and distilled, typically three times in three separate pot stills. Grain whiskey, on the other hand, is produced in three large vertical columns in a continuous triple distillation, where the spirit reaches 94% ABV. The distillery also works with reverse osmosis water before casking, and there is the option to adjust the cut point during pot still distillation to shape different flavor styles. The facility has both copper pot stills, column stills, and a 900-liter gin still, and capacity is described as 16 million liters of whiskey spirit per year.
Maturation and cask types
Maturation primarily relies on American white oak, Quercus alba, in bourbon casks, which are highlighted for imparting vanilla, caramel, and e.g. The distillery has bonded warehouses and multiple storage locations, where each cask is monitored closely. In addition to bourbon casks, sherry butts, port, rum, and wine casks are also used for both maturation and finishing. The minimum age for Irish whiskey is three years, but part of the spirit is stored significantly longer, and the distillery works with casking to customer specifications across malt, pot still, and grain styles.
Whiskeys
The range is largely built around production for other brands, bulk batches, private labels, and contract distilling. Great Northern supplies spirit to many types of Irish and international whiskey brands and highlights more than 400 labels in its supply. In addition, the distillery produces its own spirit styles such as Irish Single Malts, Irish Pot Still, Irish Grain Whiskey, Irish Poitín, and Irish Gin. The only specifically documented retail whiskey in the material is Burke’s Irish Whiskey, a historic 14/15-year-old single malt bottled in five casks at cask strength. This gives an impression of a distillery where flexibility and scale matter more than a narrow core range.
