Overview of the Distillery

Michter’s Distillery in Louisville, Kentucky, produces a range of American whiskeys with a clear emphasis on single-barrel releases and very small batch sizes. The distillery highlights a historical heritage dating back to 1753 and stands out for handcrafted choices such as air-dried oak, toasting before charring, barreling at a lower entry proof (103), and active heat/cooling cycling in the warehouses to intensify wood interactions.

History

Michter’s traces its story to American whiskey heritage and notes a historical lineage back to 1753. Over time, some products have held particular significance: Michter’s Original Sour Mash was the distillery’s best-seller in the 1970s and 1980s, disappeared from the market in 1989 and was reintroduced in the US line in 2012. US Unblended American Whiskey was re-released in late 2013 after a pause, in a decision attributed to Master Distiller Willie Pratt. In 2019, Michter’s US Sour Mash Whiskey earned international recognition by being named "Whisky of the Year" by The Whisky Exchange.

Ingredients and Production

The production combines raw materials and processing steps designed to highlight the influence of the wood and preserve the character of the spirit. For bourbon, high-quality American corn is used; the rye expression is produced from selected American rye, where the grain is described as 'sheared' for maximum flavor extraction. A central part of the process is demanding cooperage to provide open-air seasoned oak, typically air-seasoned for at least 18 months (and up to 60 months). Barrel staves are toasted before they char, which promotes caramelization and creates a concentrated 'red line' in the wood. The distillate is filled into barrels at a lower entry proof of 103 proof (51.5% ABV) to create a different barrel chemistry and reduce the need for dilution when bottling. Warehouses are heated and then naturally cooled during the winter months to stimulate additional 'cycles' between the wood and the liquid. All releases are either single barrel or batched in special equipment that holds a maximum of twenty full barrels. Finally, a tailored filtration protocol is used chosen based on the individual whiskey's character rather than a standard method.

Maturation and Barrel Types

Michter’s primarily works with American oak: new, four-charred American white oak barrels are used for bourbon, rye, and sour mash, while US Unblended American Whiskey is aged in whiskey-soaked American white oak barrels. The casks are often air-seasoned in 18–60 months. Toasting before charring and barreling at 103 proof are noted as deliberate choices that influence how quickly and how far flavors from the wood penetrate the whiskey. Heat cycling in the warehouses is highlighted as a means to increase the number of interactions between liquid and wood and thus the maturation quality.

Whiskies' Style and Flavor Profile

Across the product descriptions runs a thread of sweeter wood notes and spice: vanilla and caramel/butterscotch are frequently mentioned, dried/fruit-like nuances such as stone fruit or candied cherries appear in several expressions, and the spicy/peppery character is especially documented in the rye expression. Some expressions are also described with a 'smoky depth', which together with the oak influence forms the overarching style.

These choices are presented as central elements in the pursuit of delivering 'the greatest American whiskey'.
