History

Lyon Rum is the flagship of Windon Distilling Company, a cane-to-glass handcrafted distillery in Saint Michaels, Maryland. The company was founded in 2012 and established to produce rum and rum liqueurs, thereby redefining the category "New American Rum." Jaime Windon, the founder, runs the operation and communicates the distillery's approach to the art of rum. All Lyon Rum drops are hand-distilled in small batches, from cane to glass, and the distillery is located in Old Mill. The focus is on a unique American rum and an open approach to visits and tastings.

Production / Manufacturing

Fermentation occurs using 100% Louisiana sugar beets and molasses, and rum distillation is carried out in small pot stills. The products are hand-bottled, and the entire process is cane-to-glass. Lyon Rum liqueurs are hand-infused with natural whole fruits and botanical ingredients without colorants or additives, and all products are gluten-free. White rum is typically bottled at 45% ABV, unfiltered and unaged. Production and co-production take place on-site in Saint Michaels, and the distillery's ties to the country's craft are highlighted.

Visit / Experiences

The distillery is located in Saint Michaels, Old Mill, 103 East Marengo Street. The Tasting Room & Spirit Shop is open daily, with complimentary samples of signature spirits: Monday–Friday 11:00–17:00, Saturday 11:00–18:00, Sunday 11:00–16:00. Golden Hour is a new room and event space open Friday 2–6, Saturday 12–18, and other times by appointment. Tours of the production facility are not currently offered, but the entire team is involved in the cane-to-glass process, and private behind-the-scenes experiences can be arranged through Jaime. Maryland delivery is offered via the Rum Runner van, and shipping is handled by third parties to 40+ states. Wholesale inquiries are welcome in MD/DC/DE.
