Immortal Spirits & Distilling Company is located in Medford, Oregon and was founded in 2009. History
Immortal Spirits began in 2009 in Medford as a craft project with the goal of making spirits entirely from scratch. Early in the process, the team chose to build a large portion of the equipment themselves; among the units mentioned are a 60-barrel mash tun, a 1200-gallon stripping pot still and an 88-gallon spirit pot still. From the outset, the company has emphasized controlling the entire value chain: mashing, fermentation, distillation, aging and bottling all take place on-site. Each bottle bears a hand-number and a release date as part of the distillery's signature. Over the years the range has expanded with several types of spirits, and today the distillery runs a tasting room where guests can taste the products and purchase bottles to take home.
Raw Materials and Production
Production at Immortal Spirits is centered on full in-house manufacturing. Raw material preparation, mashing and fermentation take place on-site, and distillation occurs in pot stills consisting of a stripping pot still and a spirit pot still. The distillery built a large portion of its own equipment, which provides tight control over the technical processes. After distillation, the spirits are aged in suitable casks; whiskies are aged specifically in new, charred Oregon oak casks produced in Oregon. Bottling and bottle handling also take place on-site, and each bottle is numbered to document the release date and bottle identity. In addition to whisky they produce rum, absinthe, gin, brandy, eau de vie and seasonal products such as nocino.
Maturation and Cask Types
Immortal Spirits uses new, charred Oregon oak barrels from Oregon for their whisky aging. The choice of new, charred Oregon oak casks is a central element of their aging strategy and underscores a desire to work with locally produced wood. The bottles are numbered at release so aging time and the bottle's release date can be documented for each release.
Whiskies
The range spans widely: whisky is identified as the distillery's flagship, but they also produce gin, rum, absinthe, brandy, eau de vie and seasonal products. The website highlights, among other things, Limoncello (64 proof / 375 ml), Antarctica Gin (100 proof / 750 ml) and Nocino (74 proof / 375 ml). The products are sold in the tasting room's retail shop, and the bar uses the house spirits in cocktails on the restaurant's menu.

There are several documented flavor profiles in the house: limoncello shows a distinct lemon/citrus character, nocino demonstrates a nutty character, and the whisky aging in charred Oregon oak casks points to a pronounced use of charred oak as a flavor contributor. Visit the Distillery
The distillery's tasting room in Medford is open Tuesday through Saturday from 5 PM to 10 PM. Here there is a bar with cocktails, a full restaurant menu and a retail department where you can buy bottles to take home. The tasting room and restaurant serve as a gathering place to sample the house spirits and experience how they are used in cocktails and on the menu.
