Devils River Whiskey
Overview of the Distillery
Devils River Whiskey is a San Antonio-based whiskey brand and distillery that builds its profile on limestone-filtered spring water from the Devils River. Production centers around small-batch bourbons and r yes, as well as flavored variants. The company has established financial support for the conservation of Devils River and also collaborates with American Rivers. The distillery’s premises in Burns Building are also used as a rental venue with distinctive rooms for events.
History
The name Devils River traces back to 1840, when Texas ranger John Coffee Hays named the watercourse. The water’s naturally filtered, iron-free spring water is highlighted by the company as a central raw material for their whiskies. In recent years, Devils River Whiskey has aligned itself with conservation efforts: a portion of the proceeds from every bottle sold goes to Devils River Conservancy, and the collaboration with American Rivers is directly linked to the release of 5-Year Rye. These partnerships represent an ongoing commitment to protecting the river’s water quality and surroundings.
Raw Materials and Production
The ingredient list primarily comprises corn, rye, and malted barley, and the brand’s texts emphasize limestone-filtered spring water from the Devils River as the drinking water source. Several of the company’s products are described as small-batch expressions, and they offer bottles at higher proofs such as barrel strength. The venue and event description mention copper distillation equipment as part of the physical environment. In the product range, one finds a high-rye bourbon focus in several expressions alongside standard bourbons and multiple rye expressions.
Maturation and Barrel Types
The emphasis in aging is on charred oak barrels. Distiller's Select is explicitly stated as aged in Texas heat for over three years, which the company links to deeper oak influence. 5-Year Rye is described as aged five years in charred oak barrels. There are also barrel-strength releases, which preserve a larger portion of the barrel’s concentration in the bottled spirit.
Whiskies
The lineup includes a base bourbon and a rye, both listed at 90-proof / 750 ml, plus a Barrel Strength release (117-proof), Distiller's Select (120-proof, aged over 3 years) and a 5-Year Rye (100-proof, 5 years). In addition to these core expressions, the brand offers flavored variants such as Coffee Bourbon, Agave Bourbon, and Cinnamon Bourbon. The products are marketed in small-batch series and sold via the brand’s online shop and retail partners.
