About the distillery

Eden Mill is St Andrews’ own gin and whisky distillery on the shores of the Eden Estuary. Here you can visit the distillery, book tours and tastings, and round it off with a drink at The Lookout Cocktail Bar. For whisky lovers, the house is especially interesting thanks to its clear grain-to-glass story, its consistent bourbon- and sherry-influenced single malts, and its annual Art of St Andrews releases.

History

Eden Mill is closely tied to St Andrews, where the distillery describes itself as the city’s own gin and whisky distillery. The place builds its identity on local roots at the Eden Estuary and on its connection to the city, which shows up in both naming, experiences, and products. The whisky story unfolds through the distillery’s current range: New Make Spirit marks the starting point before maturation, the fixed Eden Mill Collection features bourbon- and sherry-cask-matured single malts, and the Art of St Andrews series shows a more specific development from the 2023 release—which is the first lightly peated in the collection—to the 2024 release with Amarone and sherry casks, and a final period in first-fill Amarone wine casks from Verona. In addition, the 2025 single cask release is bottled from a single first-fill Oloroso cask and selected from a reserve of maturing stock. Together, it paints a modern distillery where the place, the maturation, and the small batches are part of the narrative.

Ingredients and production

The whisky at Eden Mill is based on barley and a distinct grain-to-glass approach. New Make Spirit is described as spirit directly from the stills, before oak and maturation, and as the result of a curated distillation process. This makes it a clear look into the young spirit before the casks leave their mark. The distillery also works with local connections in several products, and the same idea of local rootedness carries through in the whisky story, where St Andrews and Fife are part of the framework. The single cask releases are selected from a reserve of maturing stock, showing that the house works with both ongoing production and especially selected casks. The range spans classic bourbon and sherry expressions to more complex editions, with Oloroso, Pedro Ximénez, Cognac, and Amarone as notable components.

Maturation and cask types

Maturation is one of Eden Mill’s clearest hallmarks. The fixed collection has bourbon- and sherry-cask-matured single malts, while the 2023 edition of Art of St Andrews has been matured in bourbon, Oloroso, and Pedro Ximénez casks and then finished in premium ex-Grande Champagne Cognac casks. The 2024 edition has been matured in Amarone and sherry casks and has received a final period in first-fill Amarone wine casks from Verona, giving it a deep vinous character. Single Cask 2025 is a cask strength single malt from a first-fill Oloroso sherry cask, indicated as 10 years and 59.8% ABV. It shows a producer that uses cask type and finishing as central tools in its whisky profile.

Whiskies

The whisky range includes both the fixed Eden Mill Collection and limited Art of St Andrews releases. In the fixed collection, bourbon- and sherry-cask-matured single malts stand as the house’s core expression. The Art of St Andrews series is more experimental and tells the story of each year’s release with different cask combinations and stylistic choices. The 2023 edition is lightly peated, the 2024 edition is characterized by Amarone and sherry, and the 2025 edition continues as a single cask. New Make Spirit sits as a separate product alongside the whisky and shows the distillery’s spirit before maturation.

The style and flavour profile of the whiskies

Eden Mill’s style moves between freshness, fruit, and cask character. Original Gin is described as crisp and refreshing with a coastal twist, while Golf Gin is floral and subtly salted. On the whisky side, the 2024 edition brings notes of cherry, fig, raisin, almond, and cinnamon, and the 2023 edition marks a lightly peated direction. New Make Spirit is described as grassy, fruity, and floral, resulting in an overall picture of a profile with both grain, light smoke, vinous fruits, and spice.

Visit the distillery

Eden Mill welcomes visitors with the Classic Gin Tour and Classic Whisky Tour, and children from 8 years old and up can join together with the adults. There are also tastings, The Lookout Cocktail Bar, and a golf simulator as part of the experience. Booking is required, and weekend slots fill up quickly. Private cask owners get their casks filled at the new distillery, and the Cask Owners Club offers the opportunity for private cask ownership.

Philosophy and craftsmanship

Eden Mill builds its identity on St Andrews and lets the place be the red thread through both products and visitor experiences. Grain-to-glass is worked with as a central whisky idea, and local botanicals and ingredients are deliberately used in several products. At the same time, cask ownership and small, specially selected releases are part of the distillery’s way of working, linking craftsmanship with both local footing and selected casks.
