History
Split Spirits was born to explore and discover delicious and distinctive flavors with a sense of place. The company carries forward the legacy of Appalachian Gap Distillery and builds on a philosophy of small-batch and experimental flavor experiences. As America's first Climate Neutral-certified distillery in Middlebury, Vermont, Split Spirits works with locally sourced ingredients and a sustainability-oriented approach to create characterful spirits.
Production / Manufacturing
We mill locally grown grain from organic or regenerative farmers and ferment, distill, age, and bottle all of our spirits in our climate-neutral distillery in Vermont. 100% of our electricity comes from our solar installation; our stills run on renewable natural gas from local by-products. All grain is from local organic or regenerative farmers, which helps soil health and reduces transportation emissions. Bottleware is primarily made from 100% recycled glass, and the wood in the Split Spirits line comes from unusable parts of trees already felled under sustainable forest management. Spent grain from distillation is sent to a biodigester to produce electricity. The building is highly insulated, and motion sensors and natural light are used to minimize energy consumption. These measures are part of our efforts to be Climate Neutral.
Products / Whisky Series
Split Spirits crafts a range of spirits, including whiskey and gin products. Among the whiskey lineup are Ridgeline Vermont Whiskey, Barred Owl Bourbon, Drumlin Champlain Valley Rye Whiskey, and Essential Vermont Malt Whiskey. All products are produced with a focus on locally sourced grain and small-batch production. The names and descriptions below give a sense of the individual products: - Ridgeline Vermont Whiskey – a whiskey with fresh autumn fruit notes, spice and vanilla, followed by leather and tobacco on the nose and a warm, sweet-spiced finish with a note of nuts. - Barred Owl Bourbon – aroma of honey, caramel and vanilla; the finish is warm, oak-forward and lightly sweet. - Drumlin Champlain Valley Rye Whiskey – rye notes fading, pepper, toffee, dark fruit and spices; the finish is fruity and earthy with a hint of smoke. - Essential Vermont Malt Whiskey – floral, citrusy notes, malt sweetness with hints of butterscotch, caramel and roasted marshmallows; aged in white oak casks for more than four years.
Visits / Experiences
We invite you to tour and taste at our state-of-the-art distillery and tasting room in Middelbury, Vermont, and our newly opened tasting room in Manchester. The distillery and tasting room in Middelbury are open Fridays and Saturdays from 1–5 pm, and the Manchester location is open Thursday to Sunday. We encourage you to contact us for events and planning visits. We continue to experiment with small-batch products and new releases are launched on an ongoing basis.
